We love our Tex-Mex and we love these Tex-Mex beef tacos! We love all Mexican food; we have tacos at least once a week! I know everyone can make tacos, but I add potatoes and do them a little different so thought I’d share.

These are so easy and something you can make so quickly for your family and everyone will love them. This recipe can be doubled or tripled.

Living in Texas I’ve been eating tacos my entire life! We prefer corn tortillas but they are equally good in flour. Sometimes I fry the tortillas for a crispy taco and we especially love the San Antonio style puffy tacos! They are so good! They are balls of masa that you roll thin that begin to puff the second they hit hot oil! If you ever have the chance to try puffed tacos, you must!

We love soft beef tacos too. The first time I had a soft beef taco was at a little hole in the wall Mexican Food Restaurant in Dallas!! Until then I had always had crispy, but that hooked me on soft beef tacos!!

You could make this recipe with ground turkey or chicken also. If I did that I would maybe add a little more water and leave a little liquid in your skillet to prevent them from being dry.

I hope you love this recipe and start a taco night tradition in your home!! And honestly, with the soft corn tortillas they are pretty low in calories, well not near as much as fried tortillas!

Tex-Mex Beef Tacos

Ingredients

  • 1 Lb Ground beef or ground
  • 2 Small potatoes or 1 large
  • 1/2-1 Tsp Garlic
  • 1/2 Tsp Salt
  • 1/2 Tsp Pepper
  • 1/2-1 Tsp Chili powder
  • Oil for the potatoes
  • Tomatoes, chopped
  • Lettuce, chopped
  • 1-2 Cups Cheddar cheese, grated
  • 6-8 Tortillas, corn or flour

Instructions

  • Heat about 1/4 cup oil in a non stick pan and add the potatoes that have been diced. Season with a little salt and pepper. When the potatoes start to fry, cover the pan and reduce the heat low. When the potatoes are tender, remove the lid and let them lightly brown. 
  • When the potatoes are browned, push them to one side and add the ground beef to the same pan. As the meat browns, flip with a spatula and continue cooking and turning until there is no pink. 
  • When there is no pink, combine the meat and potatoes and continue to cook. Drain any excess fat if desired. Add all of the seasonings and about 1/4 cup water. Cook for about 10 minutes until the water is evaporated. Check for seasoning and adjust. 
  • Dice the tomatoes, chop the lettuce and grate the cheese. Wrap the tortillas in damp paper towels and microwave for about 50 seconds or heat them on a griddle. 
  • Build the tacos with ground beef and potato mixture, top with cheese and lettuce and tomatoes. Serve with your favorite salsa.
