In a separate skillet add enough oil to toast or fry your corn tortillas until crisp. Remove and set aside. Fry the eggs in the same skillet as you like them. I fried mine a little over medium.
To serve, place a tortilla on each plate, top with an egg or two, ladle some of the sauce on and top with Queso Fresco cheese or cheese of your choice. Enjoy!
