Huevos Rancheros

Ingredients
  

  • 3-4 roma tomatoes, halved and sliced
  • 1/2 onion, halved and sliced
  • 1 jalapeno, thinly sliced
  • 1 clove garlic, minced
  • salt to taste
  • 2-4 eggs for frying
  • 2 corn tortillas
  • Queso Fresco cheese or cheese of your choice.

Instructions
 

  • Add a little oil just to coat the bottom and add the sliced tomatoes, onions, jalapeno and garlic. Cook until soft and has cooked through, about 10 minutes. Season with salt,.
  • In a separate skillet add enough oil to toast or fry your corn tortillas until crisp. Remove and set aside. Fry the eggs in the same skillet as you like them. I fried mine a little over medium.
  • To serve, place a tortilla on each plate, top with an egg or two, ladle some of the sauce on and top with Queso Fresco cheese or cheese of your choice. Enjoy!
