The Best! Cheesy Meatloaf

Ingredients
  

  • 2 eggs
  • 2/3 cup milk
  • 1 1/2 sleeves Ritz Crackers, crushed
  • 1/2 cup onion, chopped
  • 4 oz. shredded sharp cheddar cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 1/2 lbs ground beef
  • 1/2 cup ketchup
  • 1/2 cup brown sugar
  • 1 tsp mustard

Instructions
 

  • Preheat oven to 350. Whisk the eggs in a bowl then add the milk and crackers. Stir in onion and cheese. Add ground beef, salt and pepper. Mix well. Shape into a loaf. Bake at 350 for 30 minutes. Combine ketchup, brown sugar and mustard to make topping. Spoon half of the topping over the meatloaf after the 30 mins of baking. Return loaf to oven for 15 more minutes of baking. Spoon the rest of the topping over meatloaf, return to oven and bake for 5-10 mins more.
    Slice and serve!
