Spicy Corn Salsa

Ingredients
  

  • 1/2 red onion, finely diced
  • 2 roma tomatoes or 1 large tomato, diced
  • 1/2-1 jalapeno, finely diced
  • 2 tsp Canned diced green chile like hatch or other brand (optional)
  • 2/3 cup fresh corn or frozen corn
  • juice of one lime
  • salt and pepper to taste

Instructions
 

  • Combine all the chopped vegetables.  Add the lime juice and season with salt and pepper to taste. Store in the refrigerator until ready to use.
