Spicy Corn Salsa

Ingredients
  

  • 1/2 red onion, finely diced
  • 2 roma tomatoes or 1 large tomato, diced
  • 1/2-1 jalapeno, finely diced
  • 2 tsp Canned diced green chile like hatch or other brand (optional)
  • 2/3 cup fresh corn or frozen corn
  • juice of one lime
  • salt and pepper to taste

Method
 

  1. Combine all the chopped vegetables.  Add the lime juice and season with salt and pepper to taste. Store in the refrigerator until ready to use.
