Love this simple mexican pizza, a super easy snack

These pizzas are really so simple and just fun. Just a great snack for lunch or a night time supper and your kids will love this. There’s nothing authentic about these though; they are more TexMex. Tortillas, beans, taco meat, taco sauce, lots of cheese how can you go wrong? And they take minutes to make!

I had actually forgotten that I had this in my blog recipes to post until I ran across it while I was looking at photos! I just love these.

I used flour tortillas, but you can use corn if you like. I used Hatch Red chile Enchilada sauce and Taco Bell taco seasoning. See how easy this is? Oh, and of course lots of cheddar cheese! Here’s the simple recipe!

Ingredients Method

Ingredients
  

  • 1 lb ground beef
  • 1 pack taco seasoning
  • 3/4 cup water
  • 1 cup vegetable oil for frying the tortillas
  • 8 taco size flour tortillas (I like to use the flour tortillas that are packaged but have not been cooked)
  • 1 15 oz can refried beans or homemade
  • 1 10 oz can enchilada sauce
  • 2 cups shredded cheddar, monterrey jack or a blend
Toppings
  • diced tomatoes
  • sliced green onions
  • shredded lettuce
  • sliced olives, optional
  • sliced avocados

Method
 

  1. Preheat oven to 400f.
    In a large skillet, brown and and crumble the ground beef
    .Drain excess grease. Place cooked beef back in skillet and add taco seasoning packet and water and stir. Bring to a boil then reduce heat and simmer until thickened.
    In a large skillet, heat up oil over medium heat. Add tortillas (one at a time) and cook for 3-4 minutes (flipping frequently) until crisp. Continue with the rest of the tortillas. Set aside
    .Meanwhile, heat up the refried beans in a microwaveable-safe bowl. This will make it easier to spread the beans onto the tortilla shells.
    On each tortilla, slather a generous layer of refried beans. Then top with seasoned ground beef.
    Place another tortilla on top. Slather about two tablespoons of the enchilada sauce on top. Then place some shredded cheese on top of the sauce. Continue assembling the rest of the pizzas.
    Place the pizzas on a large nonstick baking sheet and bake for about 8-10 minutes until cheese is melted. Serve with your favorite toppings!

This Sausage and Pepperoni Pizza started out just a frozen cheese pizza. Allen wanted pizza yesterday and this was his suggestion. I was at my local HEB and he said just pick up a frozen pizza with just cheese and we can add our own toppings. Well, that was a great idea! Everything doesn’t have to be completely from scratch and these grocery store prepared items that we upgrade are life savers sometimes. It sure was for me because I was running behind a little.

So how did I upgrade this pizza? I added hot Italian sausage, a quality pepperoni that I purchased from the deli section of the supermarket, thinly sliced red onions and green peppers, kalamata olives and drizzeled with a little extra virgin olive oil be serving. I also added fresh basil.

Here are some other toppings that are delicious on a pizza:

  • asparagus
  • mushrooms
  • pancetta
  • prosciutto
  • Canadian bacon
  • green olives
  • roasted red peppers
  • chorizo
  • deli sliced chicken

Topping ideas are endless. Another thing I sometimes do is toss some arugula with lemon and extra virgin olive oil and place it on the pizza after it has cooked like this prosciutto and arugula pizza.

I’ve made homemade pizza at home for years and pizza dough is really easy to make. I have used this easy dough recipe for years. https://www.foodnetwork.com/recipes/bobby-flay/pizza-dough-recipe-1921714. If you decide to make your own dough and follow the rest of the recipe, just add your favorite pizza sauce or some crushed Italian tomatoes, then your favorite cheese, like fresh mozzarella or provolone.

Ingredients Method

Ingredients
  

  • 1 Medium store bought cheese pizza
  • 2-3 Links italian sausage
  • 4-5 Large slices pepperoni
  • 1/2 Green pepper, thinly lived (I used a mandolin)
  • 1/4 Red onion, shaved like using a mandolin
  • 1/2 cup chopped black olives or combination of black and green
  • Fresh basil for serving
  • Parmesan cheese for serving
  • Red pepper flakes for serving
  • Extra virgin olive oil to drizzle

Method
 

  1. Remove the pizza from the box and heat your oven according to you’re package instructions. I cooked this at 350 with the pizza directly on the oven rack.
  2. Cook your italian sausage and slice your pepper and onions.
  3. Chop or slice the olives.
  4. Place the pizza on a work surface and distribute the cooked sausage. Now add the pepperoni. Add your sliced peppers and onions, then sprinkle your olives over the pizza. Bake until golden brown and cheese is melted.
  5. Remove the pizza from the oven and drizzle with extra olive olive oil and top with lots of fresh basil, chopped or whole.
  6. Serve immediately with red pepper flakes, parmesan cheese if desired. Enjoy!
  7. Don't forget to keep some simple cheese pizzas in the freezer to build your own spectacular pizza at home.
