These Birria Tacos with Consommé are delicious. Remember the birra de res, Mexican stew that I posted the other day? These tacos are from the leftover beef and the consommé for dipping them in. These are loaded with cheese, the meat and the toppings that you used in the stew which were onions, cilantro and cabbage, served with a bowl of the broth for dipping.

To make these I dip corn tortillas in the consommé, then in the chile oil that I made with the birria and place on a hot gridle or pan. I then add a handful of cheese, the meat and the onions, cilantro and cabbage. Then I fold them over, and flip until done on both sides. Ingredients Method

Ingredients
  

  • water (See note in instruction)
  • 2 lbs beef bones (optional)
  • 5 lbs chuck roast or brisket (I prefer brisket)
  • 1 large onion
  • 1 whole garlic, halved through the middle
  • 4 bay leaves
  • 2-3 epazote or bay leaves
  • 5 carrots, halved or quartered
  • 5 5 guajillo chiles or New Mexico chile,
  • 5 pasilla chiles
  • 2 ancho chiles
  • 3 tbsp chicken bullion or cubes
  • 1 tbsp salt
  • dried chile powder if needed
Birria Chili Oil
  • 4 Guajillo chiles plus 1 extra for infusing the oil
  • 2 bay leaves
  • 1/2 tbsp Mexican Oregano
  • 1/2 tbsp chicken bullion
  • 1/2 tsp black pepper
  • 1/4 tsp ground cloves or 2 whole cloves
  • 1/2 tsp granulated garlic powder
  • 1/4 tsp sugar
  • 1 cup canola or vegetable oil
  • For a spicier add 1/2 tsp cayenne pepper
Toppings
  • 1/2 chopped white onion
  • 1/2 bunch chopped cilantro
  • 1/4 head finely shredded green cabbage
  • lemon or lime to taste
For the Tacos
  • Corn tortillas
  • Good melting cheese like Mozzarella, Munster or Oaxaca
  • leftover toppings, onions, cabbage and cilantro
  • leftover consommé
  • leftover beef
  • chile oil

Method
 

  1. Bring the water to almost a boil. If you're using a large pot start with about 16 cups of water. If not add maybe 8 to 10 cups, add your ingredients, then add more water to cover the ingredients. You want the roast and bones covered. Add the beef bones and the chuck roast to the water. Then add your onion and your dried chiles. Add the whole garlic, bay leaves and carrots. Add the salt and the chicken bullion.
  2. Make sure you have enough water to cover the meat. Start the meat to a boil and when the impurities start to come out from the beef bones, remove with a skimmer. Allow the beef and other ingredients to continue to simmer for about an hour.
  3. Meanwhile, prepare your chile oil. Remove the seeds and stems from the 4 Guajillo Chile. Place the chiles, bay leaves, chicken bullion, pepper, cloves, garlic powder, and the sugar (reserving the oregano for later) into a blender or coffee grinder and make a powder. Crumble the other chile and set aside.
  4. Heat the chile oil to frying point, then remove from heat. Add the crumbled chile and cook, stirring until the crumbled chile is crisp. Remove the chile and reserve.
  5. In a bowl, add the spice blend, the oregano and add the hot oil, mixing quickly.
  6. Go back to the simmering meat and check your seasoning, If you need a little more flavor add a little more chicken bullion, a little at a time until the desired saltiness is reached. Now, remove the chiles in the simmering meat pot and and add to a blender . Blend the chile with a little broth until it's smooth. Add a little broth to our blender so you can get all the puree out. Now add the chile that you fried into a blender with a little broth and puree, then add it to your beef stew mixture. Continue to cook for 2 to 3 hours until the meat it falling apart and tender.
  7. At this point I like to remove the meat, carrots and the bones to a bowl. you don't have to, but at this time I like to strain the broth because you added a whole garlic with the skins on. When you strain, press the garlic trough the strainer as much as possible with a spoon.
  8. Add the broth back to the pot and your meat that you took off the bones and the roast itself that you have cut into pieces. Some do not strain at this point, so you don't have to. Also, if you want to add fresh carrots and cook until they are tender.
  9. To serve, add some of the meat to a bowl along with the consommé. Add your toppings and a little of the chile oil drizzled on. Serve with some lime juice! Delicious!
For the tacos
  1. Heat your grill or gridle to medium high. Dip each corn tortilla into the consommé, then the chile oil and place them on the griddle or grill. Top with some cheese first, then the meat, then the onions, cilantro and cabbage, more cheese, fold over and cook on both sides flipping until a little crisp and cheese is melted.
    Serve with a cup of the consommé for dipping and additional chile oil.

This Birria – a Mexican Stew is so good! I’ve been trying to post this recipe all week while in Cabo but the internet has been so slow I haven’t been able to. Ugh! Every time I travel I think I’ll be able to post as I’m there with local foods and experiences, but the internet is often a problem.

I’ve made this twice, once at home and once in Cabo which we made last week. This is a beef stew that you cook with dried guajillo chile and others if you like, that you remove after about an hour of cooking and they are soft, and then purée and add back in to the stew and allow to cook until fork tender. Absolutely delicious!

I used chuck and beef bones to make the stew. This is so similar to an American beef stew. Typically potatoes aren’t added, but you could. I also add carrots that I don’t think are typical, but I like to add them for added flavor. The stew is started with adding the beef and beef bones to simmering water along with the chiles, garlic, onions and some carrots to add flavor. Then I bring it to a boil, skimming off the impurities caused from the beef bones to insure a clear consommé. I then cook for about an hour, remove the chile and puree, add it back in and allow to continue cooking.

To serve, you spoon the meat and consommé into a bowl and top with fresh onions, cilantro and shredded cabbage! Serve with some limes and tortillas and you have a delicious Mexican stew! Everyone loved it.

I make extra when I make this recipe because the best, in my opinion is the leftovers in tacos! I make a chile oil that I dip tortillas in after I have dipped them in the leftover consommé, then place them on a hot griddle and load them with leftover beef, the onions, cilantro, cabbage and a good melting cheese like mozzarella or Monterrey Jack, then fry them on the griddle until they have crisped a little and the cheese is melted and oozing! Yum! so delicious.

When they are done, serve them with a cup or bowl of the consommé and more of the chile oil, fresh limes.

These tostada chilaquiles are so delicious! Layered with black beans and sauced with hatch green chile sauce or a delicious tomatillo sauce, how could you go wrong? I topped them with a sunny side up egg, queso fresco, thinly sliced radishes and avocado chunks. Yum!

I used hatch green chile sauce because I had it on hand but you could easily use a tomatillo sauce. I honestly like the green chile sauce much better than a tomatillo sauce, but that is our personal preference. I am including a recipe for the green chile sauce and the tomatillo sauce.

We make the green chile from frozen green chiles that have been roasted, then we remove the seeds and stems. So good!

There’s just something about crunchy corn tortillas, green chile’s or tomatillo, fresh avacado and the yellow of an egg that creates another layer that makes the most amazing breakfast! You have to try this breakfast! You can use any tostado shells; these are what I used https://amzn.to/2YY4Pyr but there are great tostados in most grocery stores.

Tostada Chilaquiles

Ingredients Method

Ingredients
  

For the Hatch Green Chile Sauce
  • 2 tbsp vegetable oil
  • 1/2 – 1 medium onion, finely chopped
  • 2-3 garlic cloves, minced or grated
  • 1 tbsp all purpose flour
  • 2 cups pureed green chile, mild, medium-hot from fresh roasted chile that the seeds have been removed, the stems and the outside char has been removed.
  • 2 cups water
  • 1/4-1/2 tsp ground cumin
  • 1/4 tsp dried Mexican oregano
  • 1/2 tsp salt (or to taste)
For the Tomatillos Sauce
  • 4 lbs tomatillos, husked and rinsed
  • 1 large jalapeno, stemmed
  • 2 cups cilantro leaves and stems chopped
  • 1/4 cup garlic cloves
  • salt
  • pepper
For the Assembly
  • 1/4 cup canola oil
  • 1 small onion, thinly sliced
  • 12 6 inch tostadas
  • 4 large eggs
  • 1 15 ounce can black beans, rinsed, drained, warmed and seasoned with salt
  • sliced radishes, sliced avocado, sliced jalapenos and crumbled queso fresco for garnish

Method
 

For the Green Chile Sauce
  1. Warm the oil in a heavy saucepan over medium heat. Add the onion and garlic and sauté until the onion is soft and translucent, about 5 minutes.
  2. Stir in the flour and continue cooking for another 1 or 2 minutes. Mix in the chile. Immediately begin pouring in the water or stock, stirring as you go, then add the salt. Add the cumin and oregano if adding.
  3. Bring the mixture to a boil. Reduce the heat to a low simmer and cook for about 15 minutes, until thickened but still very pourable. Use warm or refrigerate for later use.
  4. For an extra smooth sauce, I like to strain pushing the solids as much as you can through with the back of your spoon. You won't get all the solids, but you will definitely get the amazing flavors.
For the Tomatillo Sauce
  1. In a large saucepan, combine the tomatillos and jalapeño 
and add 8 cups of water. Bring to a boil, then simmer over moderate heat, stirring, until the tomatillos are very soft but not falling apart, about 15 minutes. Using a slotted spoon, transfer the tomatillos to a blender. Add 1 cup of the cooking liquid to the blender. Add the chopped cilantro and garlic cloves and puree until smooth. Season the salsa with salt and pepper. Discard the remaining cooking liquid.
For the Assembly
  1. In a large skillet, heat 2 tablespoons of the oil. Add the onion and cook over moderate heat, stirring occasionally, until golden, 7 to 8 minutes. Stir in the tomatillo salsa or the green chile sauce and simmer for 5 minutes. Dip 1 tostada at 
a time in the preferred sauce, turning, until some of the sauce s absorbed but the tostada still holds its shape, about 15 seconds. Transfer the tostada to 
a large plate; repeat with the remaining tostadas. Transfer the remaining salsa to a bowl.
  2. In a large nonstick skillet, heat the remaining 2 tablespoons of oil. Crack the eggs into the skillet and cook sunny-side up over moderate heat, 3 to 4 minutes.
  3. Place 1 tostada on each of 4 plates. Spoon some of the beans on top and cover with another tostada. Repeat with the remaining beans and 4 remaining tostadas. Top each stack with a fried egg. Garnish with the radishes, avocado slices, jalapeños, queso fresco 
and cilantro sprigs and serve with the remaining salsa.

Wow! This mexican grilled chicken cobb salad is crazy good! Just look at it! Lettuce, tomato, grilled chicken, avocado, lettuce, beans, olives, cheese, eggs??? I’m sure I’m missing something because there’s so many ingredients! I actually had grilled corn I was going to add and I forgot it! Do you all do that?

The chicken is coated with a mixture of olive oil and taco seasoning mix. I used Taco Bell taco seasoning that I buy at my grocery store. Here’s a link for the taco bell seasoning: https://amzn.to/2vXl9F4

For the dressing I used a Chipotle Ranch Dressing that I made from adding a chipotle pepper and the adobo sauce to ranch dressing that I had made from the Hidden Valley spice mix. Ingredients Method

Ingredients
  

For the Tortilla strips
  • 4-6 corn tortillas
  • oil for frying
  • salt to sprinkle after cooking
For the Chipotle Ranch Dressing
  • 1-1 1/2 cups ranch dressing bottled or homemade
  • 1-2 chipotle peppers from canned chipotle in adobo sauce
  • 1-2 tbsp adobo sauce
For the Chicken
  • 1 lb boneless, skinless chicken breast
  • 1 packet Taco Bell taco seasoning mix or taco seasoning mix of your choice
  • 3-4 tbsp extra virgin olive oil
For the remaining salad ingredients
  • 2 heads romaine lettuce, chopped
  • 1 cup cooked black beans rinsed and drained or pinto beans rinsed and drained
  • 1 cup fresh grilled corn on the cob kernels
  • 1 cup cherry tomatoes, halved
  • 4 hard boiled eggs, sliced
  • 1 can ripe olives
  • 2 avocados, sliced and divided
  • 1 cup Monterrey jack or cheddar cheese, grated
  • sliced limes for serving
  • salt and pepper to taste

Method
 

For the Tortilla strips
  1. Cut the tortillas in half, then stack them on top each of other and cut into about 1/4 inch strips. Heat the oil in a skillet and add the tortilla strips, a few at a time and cook until golden brown. Repeat the process until all have been cooked. Sprinkle with salt and set aside.
For the Chipotle Ranch Dressing
  1. Either use a bottled ranch dressing or use a homemade dressing. I used the Hidden Valley Ranch Dressing with the packet of ranch dressing mix with milk and mayonnaise. To that, add one or two chopped chipotle peppers and the adobo sauce to the desired heat that you like.
For the Grilled Chicken
  1. In a gallon zip lock add the Taco Bell seasoning mix or the taco seasoning mix of your choice and the olive oil. Add the chicken breast and coat them on all sides. After your grill is ready, cook the chicken breast, turning until done. Chicken should reach an internal temperature of about 160, then allowed to rest for at least 5 minutes that the temperature will rise to 165 degrees.
To assemble the salad
  1. In a large bowl combine the lettuce, cheese, beans, corn, olives and tomatoes in a bowl. Toss well to combine. Divide the mix among 4 plates. Slice each chicken breast and top each of the salad plates. Top each with the divided deviled eggs and the divided avocado, Top with the dressing and serve with limes if you like.

These Red Chile Marinated Carne Asada Tacos are so good! If you follow me you know the hubs favorite thing to eat ever is tacos! I can ask him every single day, “what do you want to eat?” and he says “tacos”. Obviously, that doesn’t happen but we do have a lot of Mexican food.

I used a thin rib eye steak that you can get at your supermarket. I see that much more than before, so it must be in demand. It’s just a ribeye steak that is sliced thin. If you can’t find it already prepared that way ask the meat market to slice some for you.

These Carne Asada Tacos are kind of the best of two worlds. We love authentic Mexican food and we love Hatch Red Chile. In Mexico they simply season their steak and grill it which is delicious but I added our love of New Mexico sauces like the Hatch Red Chile. Simple Favorite Red Chile Marinated Carne Asada Tacos!

Red Chile Marinated Carne Asada

Ingredients Method

Ingredients
  

  • 8 oz (about 20 to 25) dried whole red New Mexican chile pods, mild, medium or hot, or a combination
  • 2-4 cups water
  • 2 tbsp vegetable oil
  • 1 medium onion, minced
  • 3 garlic cloves, minced
  • 1-2 tsp crushed Mexican oregano
  • 1 tsp salt, or more to taste
For the Red Chile Marinated Carne Asada
  • 1 lb very thin sliced ribeye steak
  • 1/2 cup Red Chile sauce
  • 4 flour tortillas
  • 1/2 cup Monterrey jack cheese
  • 2 avocados, sliced and divided
  • 1 tomato diced
  • 1/4 white onion diced

Method
 

  1. Remove the stems and seeds from the dried chile pods. Toast the chile pods in a heavy skillet over medium heat until they are warm and release their fragrance, 1 to 2 minutes per side.
  2. Remove the chile pieces and place into a sauce pan and cover with water. Bring to a boil, reduce the heat and simmer for about 10 minutes until the chile is soft.
  3. Remove the chile from the liquid and place into a blender or food processor. Blend until a smooth paste. Strain the paste, pushing through with the back of a spoon. This takes a few minutes. You just want to keep straining, pushing the puree through leaving behind any skin or seeds, adding a lilttle water if you need to.
  4. Warm the oil in a skillet, add the onion and garlic and cook until the onion is limp. Add the chile mixture to the onion mixture, along with the oregano and salt , adding more water. You want a pourable sauce, not a thick sauce. Cook for about 15 minutes, taste and adjust the seasonings. When ready the sauce will coat the back of a spoon but still be pourable. At this point I always strain again, pushing through the sauce, leaving behind any solids. This is not mandatory, but if I'm making enchiladas I want a very smooth sauce. Enjoy!
For the Tacos
  1. Place the thin sliced ribeye steak in a zip lock bag. Pour the red chile sauce over and massage the bag to make sure all the meat is covered. Zip the bag and place in the refrigerator for 24 hours.
  2. Remove the beef from the refrigerator and place in a bowl or plate and allow to come to room temperature. Heat your grill or get your charcoal ready. When you're ready to cook, drizzle a little olive oil over the steak. Place on the grill and cook about 2-3 minutes on the first side, flip and continue to cook for an additional 2 to 3 minutes. This is very thin and you don't want to overcook.
  3. Remove from the grill, place on a plate and allow to rest for a few minutes. Heat your flour tortillas on the grill flipping continuously to prevent from burning.
  4. After the steak has rested, dice or slice the meat. Place a little cheese on each flour tortilla, add the meat, add a couple of avocado slices, some diced onions and tomatoes. Serve with your favorite salsa and enjoy!

This Roasted Tomatillo Salsa is one of my favorite salsa’s. It really is the best. I like it with some heat but not to the point that I cry when I eat it! LOL!! You know how that is with some salsas. Luckily, you can adjust the heat with the number of Jalapeno or Serrano Chile’s you add.

Are you familiar with tomatillos? Here’s a brief explanation.

The tomatillo, also known as the Mexican husk tomato, is a plant of the nightshade family bearing small, spherical and green or green-purple fruit of the same name. Tomatillos originated in Mexico and were cultivated in the pre-Columbian era. A staple of Mexican cuisine, they are eaten raw or cooked in a variety of dishes, particularly salsa verde.

Tomatillos can be used in their raw state or roasted for a salsa which i did.

Along with the tomatillos, I roasted garlic and onions to add to the salsa. Ijust drizzled them with a little olive oil before placing in the oven.

The Best Roasted Tomatillo Salsa

I also roasted the onions, garlic and jalapenos before processing all of the ingredients! This is a great Salsa Verde! Enjoy!

Roasted Tomatillo Salsa

Ingredients Method

Ingredients
  

  • 1 lb tomatillos, husk removed and rinsed
  • 1/2 medium white onion, halved
  • 1-2 jalapenos or Serrano's
  • 2 whole garlic cloves, peeled
  • 1/4 cup fresh cilantro
  • 1/4 cup water
  • 1/2 tsp kosher salt
  • 1/2 tsp ground cumin
  • juice of one lime

Method
 

  1. Turn your broiler on and roast the tomatillos, chile(s), onion and garlic on a rimmed baking sheet 4 inches below a very hot broiler, until blotchy black and softening (they’ll be turning from lime green to olive), about 5 minutes. Flip them over and roast the other side. Cool, then transfer everything to a blender, including all the delicious juice the tomatillos have exuded during roasting. Add the cilantro and 1/4 cup water, then blend to a coarse puree. Scoop into a serving dish. Season with salt, usually 1/2 teaspoon.
