I’m always looking for something to throw together for a party, or to take to a party. Christmas is so much fun because many families have themes for their meal. Why not have a New Orleans themed meal? Serve this beautiful sandwich with some delicious gumbo, some charbroiled oysters like you get from Dragos in New Orleans? I love a New Orleans themed party! I love the foods of New Orleans. I had never had one until the 1980’s. Ever since then, I have tried to duplicate it! Loaded with flavor from the essential Olive Salad, Italian meats and cheese, these little packages are perfect. Of course, you don’t have to cut them like I did as you can cut them into triangles, squares, what ever suits you. The bread is round, so cutting it like a pie is the easiest and the least wasteful.

I made the bread for this recipe because I have a hard time finding a round loaf of bread. The bread recipe is really easy and forgiving if you can’t find a round loaf. You can buy on line, which I have before, but I decided to try my hand at making it and it turned out perfect.

On the final rise of the bread, I brushed the top with an egg wash and added sesame seeds.

You have to have the Olive Salad! it just makes the sandwich. I have made the olive salad before, but this time I was able to find it jarred at my favorite HEB in Waco. I bought the Central Grocery brand. If you can’t find this at your local store you can get it online. It is good stuff and makes the sandwich. If you can’t purchase, it’s easy to make. I’ll share the recipe for the Olive Salad in the recipe.

If you can’t find olive salad, here’s the ingredients:

1 cup pimento-stuffed olives (1 cup) sliced plus 2 tablespoons of the liquid from the jar.

1 cup chopped giardiniera (pickled Italian vegetables) plus 1 tablespoon of liquid from the jar.

2 tablespoons drained capers, plus 2 teaspoons of liquid from the jar.

3 ounces pitted Kalamata olives (1/2 cup), sliced

2 1/2 teaspoons minced garlic

1 tablespoon minced shallot

1 teaspoon dried oregano

1 teaspoon dried parsley

Pinch of dried thyme

Pinch of crushed Red Pepper

1/2 dup extra-virgin olive oil

**In a medium bowl combine all the ingredients and let stand for 1 hour.

Did you know that Central Grocery created the sandwich in 1906? Here’s a little history:

“The muffuletta sandwich is said to be created in 1906 at Central Grocery Co. on Decatur Street, New Orleans, Louisiana, U.S., by its delicatessen owner Salvatore Lupo, a Sicilian immigrant.[4][5] Another Italian-style New Orleans delicatessen, Progress Grocery Co., originally opened in 1924 by the Perrone family, claims the origin of the muffuletta is uncertain.[6]

The traditional-style muffuletta sandwich consists of a muffuletta loaf[7] split horizontally and covered with layers of marinated muffuletta-style olive salad,[8] salami, ham, Swiss cheese, provolone, and mortadella.[9] Quarter, half, and full-sized muffulettas are sold.[10][11]

The signature olive salad consists of olives diced with the celery, cauliflower and carrot found in a jar of giardiniera, seasoned with oregano and garlic, covered in olive oil, and allowed to combine for at least 24 hours.[12]”

Ingredients

For the Bread

  • 1 cup water 110 degrees
  • 1 tbsp sugar
  • 2 1/4 oz pkg active dry yeast
  • 3 cups bread flour
  • 1 1/2 tsp salt
  • 2 tbsp vegetable shortening like Crisco
  • 1 tsp sesame seeds

To assemble the Muffuletta

  • 1 large Round Muffuletta Bread from the recipe above or store bought
  • 1 Jar Olive Salad ( I used Central Grocery Salad – see the link in the post)
  • 1/4 lb sliced fresh Mozzarella
  • 6 oz sliced capocollo or prosciutto
  • 1/4 lb sliced Genoa Salami
  • 1/4 lb sliced mortadella
  • 1/4 lb sliced mild provolone cheese

Instructions

For the Bread

  • Add warm water to a measuring cup and stir in the sugar.  Stir in the yeast and set aside for 5-10 minutes or until foamy.
    While the yeast is developing, add the bread flour, salt, and shortening to the bowl of a stand mixer, fitted with a hook attachment.When the yeast is foamy, add it to the flour mixture and knead the dough on low to medium speed until the dough is fully incorporated and the dough is soft and smooth.
    Lightly oil a medium bowl and transfer the dough to the bowl, flipping it over once or twice to lightly coat with oil. Cover with a clean kitchen towel and put in a draft free space until doubled in size, about 1 1/2 hours.When the dough has risen, punch it down and transfer to a lightly floured surface. Form the dough into a 10" diameter round loaf and place on a baking sheet lined with parchment paper.
    Whisk the egg and water in a small bowl and lightly brush the top of the loaf with the egg wash. Sprinkle with sesame seeds and set aside in a draft free space to rise a second time until almost doubled in size, about one hour.
    Place rack in the center of oven and preheat to 425°. Bake loaf in the center of the oven for 10 minutes, thenreduce the heat to 375° and continue baking for 20-25 minutes or until golden.Let loaf cool before slicing.

To assembly the Muffuletta

  • Open the bread on a work surface. Spoon the olive salad on both sides of the bread and spread evenly. Arrange the mozzarella slices on the bottom half of the bread, then top with the capocollo, Genoa salami and mortadella. Arrange the provolone cheese on the top half of the bread, covering the olive salad completely. Carefully close the sandwich. Wrap the sandwich tightly in plastic and let stand for 30 minutes or up to 2 hours. Cut the sandwich into 8 pieces and serve.

The first thing I thought about this morning were the New Mexico Red Chile Enchiladas we had last night and needed a repeat for breakfast! These New Mexico Red Chile Huevos Rancheros were a perfect solution!

Corn tortillas dipped in the hot red Chile sauce, a little oil, topped with grated cheese and a little onion, finished with a fried egg was just perfect! I can’t think of anything better or more satisfying than these New Mexico Red Chile Huevos Rancheros for breakfast on this cold, rainy morning in December!

New Mexico Red Chile Huevos Rancheros

Ingredients

For the Sauce

  • 3 tbsp olive oil or shortening
  • 1/2 cup New Mexico Hatch Red Chile Powder (This is the preferred and it's a little different than other Chile powder, but if you don't have make it with regular chile powder)
  • 2 tbsp flour
  • 2 cups chicken broth or water
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp Mexican oregano (if you don't have Mexican Oregano you can omit)

For the Huevos Rancheros

  • 1 cup Recipe Red Chile Sauce
  • 1/2 pinto beans (canned or homemade)
  • 4 corn tortillas
  • 1/2 cup grated chedda4 cheese
  • 2-4 eggs

Instructions

For the Red Chile Sauce

  • Melt the shortening, blend in flour and cook flour until light brown, approximately 4 minutes. Add Chile Powder and blend. Have your skillet or pan at moderate heat as chile burns easily. Blend in the chicken broth or water. Cook to desired consistency. Add Salt, pepper, cumin, garlic powder, Mexican oregano according to taste.

To assemble the Huevos Rancheros

  • Have your red Chile heating in one pan and in another skillet with a little oil heating.
  • Warm your pinto beans and grate your cheese. Set aside.
  • Dip a tortilla into the oil, then the red chile, allowing the excess to drip off. Place one chile dipped tortilla on each place. Top with some of the pinto beans and a little grated cheese. Repeat the process with the remaining tortillas and stack on top of the pintos and grated cheese.
  • In a separate skillet heat a little vegetable oil. Add your eggs to the pan. Cover the skillet. After about a minute, reduce the heat to a simmer. Let the eggs cook for about 3 minutes. When done, the whites should be firm and the yolks should be runny.
  • Place the eggs on top of the tortillas, then add grated cheese, a little salt and pepper, another drizzle of the red chile and top with the remaining grated cheese.
  • I serve this with hash browns and fresh avocado! So delicious! Enjoy!

Ingredients

  • 1 2/3 Cups All purpose flour
  • 1 tsp baking soda
  • 1/4 Tsp Ground cinnamon
  • 1/2 tsp salt
  • 1 cup plus 2 tbsp Sugar
  • 2 eggs
  • 1/2 Cup Oil
  • 3 1/2 Bananas, very ripe, mashed
  • 2 Tbsp creme fraiche or sour cream
  • 1 Tsp Vanilla
  • 2/3 Cups Walnuts, toasted and chopped (optional)

Instructions

  • Set oven to 350 degrees F. Line the bottom of a loaf pan with parchment paper.
    Sift together the flour, baking soda, cinnamon and salt. Beat sugar and eggs with a whisk until light and fluffy, about 10 minutes. Drizzle in oil. Add mashed bananas, crème fraiche or sour cream (I used sour cream), and vanilla. Fold in dry ingredients and nuts if using. Butter the bottom of a non-stick loaf pan, then add a sheet of parchment paper. Pour the batter in and bake for about 45 minutes to 1 hour until a toothpick comes out clean. Some ovens cook differently so I would check at 45 minutes or when you start to smell the bread….just taking a peek to see if it has risen and begins to look firm on top. If you don't have parchment I would lightly grease the entire pan and flour the pan before adding the batter to prevent it from sticking.

Easy Taco Soup Recipe!

Everyone has a Taco Soup or a Spanish soup recipe! You know, the one you dump lots of beans, tomatoes, corns, olives, taco seasoning and Ranch Dressing Mix! Even though we all have a similar recipe, it never hurts to repost and remind everyone to make this soup and dig out the crockpot or the Instant Pot.

I made mine in my Instant Pot. If you haven’t taken the plunge and purchased an IP, I highly recommend it. They are a life saver for me many times, because you literally can cook a pot roast, soup or stocks in a third of the time it takes on the stovetop! Easy Taco Soup Recipe!

This recipe really is easy. All you do is brown ground beef, add onions and cook trhough, then add a bunch of canned ingredients and the taco seasoning and ranch dressing mix! It is really good too! I think the toppings just make it! I love to add sour cream, fresh cilantro , cheddar cheese, and fresh jalapenos if you like. Start with tortilla chips on the bottom of your bowl, ladle the soup in, then add your favorite toppings! Voila! All done!

Ingredients

  • 1 lb ground beef
  • 1 cup diced onions
  • 1 15.5 oz can pink kidney beans (red if you can't find pink)
  • 1 15.5 oz can pinto beans
  • 1 15.5 oz can black beans, drained
  • 1 14.5 oz can Mexican style stewed tomatoes
  • 1 14.5 oz can diced tomatoes
  • 1 14.5 oz can tomatoes with green chiles
  • 1 14.5 oz can hominy drained
  • 1-2 4.5 oz diced green chiles
  • 1 4.5 oz black olives, drained and sliced (optional)
  • 1/2 cp green olives, sliced (optional)
  • 1 1 1/4 oz package taco seasoning mix
  • 1 1 oz package ranch salad dressing mix
  • corn chips or tortilla chips for serving
  • grated cheddar cheese, garnish
  • sour cream, garnish
  • chopped green onions, garnish
  • pickled jalapenos, garnish

Instructions

  • Brown the ground beef and onions in a large skillet; drain the excess fat, then transfer the browned beef and onions to a large slow cooker or a stockpot. Add the beans, corn, tomatoes, green chiles, black olives, green olives, taco seasoning, and ranch dressing mix, and cook in a slow cooker on low for 6 to 8 hours or simmer over low heat for about 1 hour in a pot on the stove. To serve, place a few corn chips in each bowl and ladle soup over them. Top with sour cream, cheese, green onions and jalapenos.

This Leftover Thanksgiving Turkey Pot Pie is really good! And, who doesn't love a Pot Pie? Pot pies bring back memories of childhood eating those little pot pies from Swanson that you had to patiently wait for them to finish cooking because we didn't have microwaves.  When you have left over turkey from the holidays or just a rotisserie chicken, this is perfect  any time of the year.

This pie is loaded with vegetables and turkey in a creamy sauce, then baked in a pastry crust until golden brown. It is absolutely flaky and delicious. There is no reason rally to serve anything else with this dish. If you do a nice green salad would be perfect.

I used Pillsbury pie dough that you find in the refrigerated section of your grocery store, usually by the butter because I wanted to make this recipe even easier than it already was. Ingredients

  • 2 tbsp butter
  • 1 tbsp oil
  • 1/2 large onion chopped or one small
  • 1 cup celery, chopped
  • 2 cups carrots, thinly sliced or diced
  • 3 cups potatoes, diced
  • 4 tbsp flour
  • 4 cups chicken or turkey broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp fresh thyme
  • 1/2 tsp ground savory
  • zest of one lemon
  • 3 cups chicken, diced
  • 2 cups frozen green peas
  • 1 package Pillsbury pie crust

Instructions

  • Preheat the oven to 350. In a large saucepan, heat the butter and oil over medium heat. Add the onions, celery, and carrots and cook until the onions are translucent. Add the flour, stir to combine, and cook for about 2 minutes,
  • Add the chicken broth, whisking or stirring constantly to prevent lumping. Add the potatoes and cook, stirring occasionally until the sauce has thickened and the potatoes and carrots are tender. Gently fold in the chicken and the green peas and remove from the heat.
  • Add the bottom crust to your cassserole dish, no need to add butter or oil. You may need to roll out a little to enlarge for your dish! Pour your pot pie mixture in. Place your remaining rolled out pie crust on the top and seal the edges. Add a few slits on the top to release the steam. Bake until golden brown! Serve hot. Leftovers are great the next day. You can also make individual pot pies and freeze before cooking. I do this a lot for my Mom.

I love tamale pie. There’s just something about a spicy meat mixture with cheese that’s topped with a cornmeal cooked topping that just says comfort food. The cornmeal topping is my favorite part of this dish. I like it to be a little loose that just melts into the meat mixture.

Not only is this dish perfect right out of the oven but it is even better the next day leftover. And, it freezes well! I don’t always add cheese to the top because it’s included in the meat mixture like in the photo below, but the last time I made it I added a little Monterrey Jack cheese after I took the casserole out of the oven.

I also use this pinto bean recipe for re-fried beans because they are very simple, no added spices, but absolutely delicious!

The Best Tamale Pie

Ingredients

  • 1 1/2 lbs Ground beef
  • 1 onion diced
  • 2 Cloves Garlic, minced or grated
  • 4 Green onions, thinly sliced
  • 1 Jalapeno, seeded and sliced or chopped
  • 1/2 green bell pepper, diced
  • 1/2 red bell pepper, diced
  • 1/2 tsp Salt
  • 1/2 tsp black pepper
  • 1/2 Tsp Ground cumin
  • 1/2 Tsp smoked paprika
  • 1/2 -1 Tsp Julios all purpose seasoning
  • 1 Tbsp Chili powder, I use New Mexico red chile powder
  • 15 oz Can tomato sauce
  • 1 Cup Frozen or canned (drained) whole kernel corn
  • 1 Small can Sliced black olives, optional
  • 1 Cup Sharp cheddar cheese, grated
  • Cheddar cheese or Monterrey jack for topping
  • fresh cilantro chopped

For the Cornmeal Topping

  • 1 Cup Yellow cornmeal
  • 2 1/2 Cups Water, salted (about 1 tsp)
  • 2 Tbsp Butter

Instructions

  • Preheat the oven to to 375 degrees F. Butter a medium large casserole dish.
    Heat a large skillet and add the ground beef. I used 80/20 so I didn’t add extra oil, but if you’re using a lean ground beef you probably need to add a little oil to your skillet.
  • When your meat has started to brown, add your onions, bell peppers, green onions, garlic and jalapeños. Cook until your onions are translucent and your meat is completely cooked.
  • Add your seasonings and the tomato sauce. Cook until heated through and your spices are well mixed. Add the corn and olives if using. Now add the 1 cup cheddar cheese and combine.
  • Add the beef mixture to the buttered casserole dish.
  • Bring salted water to a boil and whisk in the cornmeal whisking constantly. If the mixture is too thick, add hot water a little at a time and continue to whisk until a smooth, spreadable, kind of pourable, mixture results. Remove from the heat and add 2 tablespoons butter and whisk until melted. I like my topping a little soft, not dry.
  • Spread the cornmeal mixture over the meat mixture, completely covering. Place in the oven and cook until bubbly on the sides and the topping has set. Remove from the oven and add additional cheddar or Monterrey Jack cheese. Sprinkle with a little chile powder if you like and chopped cilantro. Enjoy!
