We love biscuits for breakfast and these Baking Powder Biscuits are simple yet delicious. We love them with a good country pork sausage, soft scrambled eggs and some cottage fries! Perfect breakfast!

Allen loves his biscuit with Strawberry Jelly! I love mine sometimes with sausage gravy! Sausage gravy is simple. For two I brown about 1/4 pound of a good breakfast sausage with 1 tablespoon butter. Then add 2 tablespoons flour and combine, cooking for about a minute or so. Then I add two to three cups whole milk, starting with two and add more if too thick. Add salt and pepper to taste and serve with these yummy biscuits!!

Here’s a couple of tips about biscuit making. First don’t overwork your dough. When it comes together turn it out onto a floured surface and gently gather all the pieces and bits and form into a round or square. Fold over like an envelope two or 3 times, then roll out for cutting. I like to use a sharp biscuit cutter so you don’t have to twist. Twisting prevents your biscuit from rising like they should. Ingredients Method

Ingredients
  

  • 3 Cups All purpose flour
  • 1 Tsp Salt
  • 1 Tbsp Baking Powder
  • 1 Tbsp Sugar
  • 6 Tbsp Butter at room temperature
  • 1 1/8 Cup Cold whole milk or buttermilk

Method
 


  1. Preheat your oven to 425°F with a rack in the upper portion. Get out a baking sheet; there's no need to grease it. Line it with parchment if you like, for easiest cleanup.
  2. Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess. 
  3. Mix together the flour, salt, baking powder, and sugar.
  4. Work the butter into the flour mixture using your fingers, a fork or pastry blender, a stand mixer, or a food processor; your goal is an evenly crumbly mixture (think breadcrumbs).

  5. Drizzle the smaller amount of milk evenly over the flour mixture. Mix quickly and gently for about 15 seconds, until you've made a cohesive dough. If the mixture seems dry and won't come together, don't keep working it; drizzle in enough milk — up to an additional 2 tablespoons (1 ounce) to make it cohesive.
  6. Place the dough on a lightly floured work surface. Pat it into a rough rectangle about 3/4" thick. Fold it into thirds like a letter and roll gently with a floured rolling pin until the dough is 3/4" thick again.
  7. Cut the dough into circles with a biscuit cutter for traditional round biscuits; a 2 3/8" cutter makes nice-sized biscuits. Or to avoid leftover dough scraps, cut the dough into squares or diamonds with a bench knife or sharp knife.
  8. Place the biscuits bottom side up on your prepared baking sheet; turning them over like this yields biscuits with nice, smooth tops. Brush the biscuits with milk, to enhance browning.
  9. Bake the biscuits for 15 to 20 minutes, until they're lightly browned. Remove them from the oven, and serve warm.

Yummy and So Easy Banana Bread

Ingredients Method

Ingredients
  

  • 1 2/3 Cups All purpose flour
  • 1 tsp baking soda
  • 1/4 Tsp Ground cinnamon
  • 1/2 tsp salt
  • 1 cup plus 2 tbsp Sugar
  • 2 eggs
  • 1/2 Cup Oil
  • 3 1/2 Bananas, very ripe, mashed
  • 2 Tbsp creme fraiche or sour cream
  • 1 Tsp Vanilla
  • 2/3 Cups Walnuts, toasted and chopped (optional)

Method
 

  1. Set oven to 350 degrees F. Line the bottom of a loaf pan with parchment paper.
    Sift together the flour, baking soda, cinnamon and salt. Beat sugar and eggs with a whisk until light and fluffy, about 10 minutes. Drizzle in oil. Add mashed bananas, crème fraiche or sour cream (I used sour cream), and vanilla. Fold in dry ingredients and nuts if using. Butter the bottom of a non-stick loaf pan, then add a sheet of parchment paper. Pour the batter in and bake for about 45 minutes to 1 hour until a toothpick comes out clean. Some ovens cook differently so I would check at 45 minutes or when you start to smell the bread….just taking a peek to see if it has risen and begins to look firm on top. If you don't have parchment I would lightly grease the entire pan and flour the pan before adding the batter to prevent it from sticking.

Easy & Delicious, Jalapeno Cornbread from Jiffy Cornbread Mix

This Jalapeno Cornbread using a box of Jiffy Cornbread Mix was delicious and easy! Normally I make cornbread from scratch, but I’m traveling, and because I didn’t want to buy all the ingredients, I bought a box of Jiffy and added to it! The results were a huge hit! This cornbread was moist, a little sweet, cheesy, a little spicy from the jalapeño, and the corn added a little crunch.

I made this cornbread to go with my Vegetable Beef Soup! In my opinion, you just can’t have a homemade soup or stew without cornbread and this Jalapeno cornbread was a perfect addition! Ingredients
  

  • 1 pkg Jiffy Cornbread Mix
  • 1/2-1 jalapeno pepper, seeded and minced (I added about 1/4 cup green chile – optional)
  • 3/4 cup grated cheddar cheese
  • 1/2 cup whole kernel corn
  • vegetable oil

Method
 

  1. Preheat the oven to 425. When the oven is to temperature add a little oil to an iron skillet and place in the oven to heat.
  2. Meanwhile, place the jiffy mix in a mixing bowl. Add the jalapeño and cheese and toss. Add the eggs, corn and milk and combine .
  3. Remove the heated skillet from the oven and pour your cornbread mixture into it. Return to the oven and cook for 20 minutes or so until the cornbread is set and firm to the touch. Slice and serve with butter.

We love cornbread, but we really love this Jalapeno Cornbread especially with beans like my Texas Smoked Brisket Beans. This cornbread is loaded with pickled jalapenos, lots of cheddar cheese and creamed cream corn! Yum, the perfect buttermilk cornbread turned spicy and even more luscious with the corn and cheese!

Remember the creamed corn recipe from the other day that I posted? I had some leftover in the freezer so I used that in the recipe, but any good creamed corn will work. I like to use the pickled jalapenos because you know what you are getting. You can use a fresh jalapeno that you seed and dice, but you don’t always know how hot they will be. Sometimes I use a combination of both, the pickled jalapenos and the fresh jalapeno.

Ingredients
  

  • 1 cup cornmeal
  • 1 cup all purpose flour
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup sugar
  • 2 tbsp oil or melted butter plus more oil for your skillet
  • 1 can creamed corn
  • 1/2 cup chopped pickled jalapenos
  • 1/2-1 cup buttermilk
  • 2 large eggs
  • 1 1/2 cup grated medium to sharp cheddar cheese

Method
 

  1. Preheat the oven to 425 degrees F.  Whisk together all the dry ingredients in a large bowl.  Add the creamed corn, the eggs, the oil or melted butter, the jalapenos, the cheese and start with a half of buttermilk then more if needed.  Place your skillet in the oven to heat with a thin layer of oil or on top of the stove.  Iron skillets work best.  When the skillet is heated, add your cornbread batter and cook until golden brown on top and a toothpick when inserted comes out clean.

Stale bread that is buttered, seasoned and baked till crispy makes these inexpensive homemade croutons something everyone will surely enjoy. It is great to make your own croutons for your salads, etc. When you make your own you know the ingredients and you are proud of your accomplishment. You can also add your own flavorings. Not to mention that your home smells amazing while these cook which are loaded with garlic!

Ingredients Method

Ingredients
  

  • 6 cups french bread that has been cubed
  • 4 tbsp butter
  • 1/4 cup olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp parsley, chopped
  • 2 tbsp parmesan
  • 2-4 garlic cloves 2 of your cloves are large, 4 if small

Method
 

  1. Preheat the oven to 225 degrees.  Melt the butter and combine with all of the ingredients.  Place your bread cubes on a sheet pan and pour the mixture over mixing thoroughly. 
    Place the croutons in the oven and cook for about an hour until they are golden brown, turning them and scraping the bottom of the pan every 15 minutes to ensure they are all coated with the mixture.  Serve on your favorite salad.

I love hush puppies and I believe they are a necessary side for a fish fry! My recipe developing of hush puppies is a work and progress and I believe this recipe is the best yet!

When I was growing up my mother made hot water cornbread. Have you had that? So delicious. The corn bread has cornmeal, a little flour if you want, salt, a little bacon drippings and boiling water. I decided I’d try my hush puppy recipe using this hot water cornbread recipe as a base! I think I may need a little more tweaking for my hush puppies recipe , but thus far, they’re my best yet! Ingredients
  

  • 1 cup cornmeal
  • 1/2 cup self rising flour
  • 1/2 tsp sugar
  • 1/2 to 1 tsp cajun seasoning (I used Slap Yo Mama)
  • 1/2 tsp onion powder
  • 2 tsp grated onion and the juices
  • 1 cup boiling water
  • 1 tbsp butter
  • oil for frying

Method
 

  1. Combine all of the ingredients except the boiling water and butter.  Bring the water to a boil with the butter and add to the dry ingredients.  Stir to combine.  The batter will be kind of wet.  Heat the oil in a skillet to medium-high and drop the hush puppies by teaspoon or tablespoon into the hot oil.  Cook until golden brown on the first side, flip and cook until browned completely.  I cook these at medium high instead of high heat because they will be doughy if you brown them to fast.  Serve as an appetizer, with fried fish or just a snack.  Don’t forget to slather them in butter!
