We Love Traditional Hatch Green Chile Stew

Traditional Hatch Green Chile Stew has been a family favorite for years. I mean WE really love Traditional Hatch Green Chile Stew! It is loaded with tender pork, some potatoes, a beautiful gravy created from long and slow simmering, and of course the Hatch Green Chile.

This is just one of those stews that you may not be familiar with unless you have traveled to New Mexico. The Hatch green and red chile are unique to the area and they are amazing in taste, both of them, and we absolutely love both. You can get mild, medium or hot. I tend to use a combination of mild with a medium or a hot. We like a little kick, but not too hot to eat!

The harvest of the green Chile is seasonal. When you are in New Mexico, and even now in Texas you will find fresh green chilies and they will roast them for you. I store them in individual bags in the freezer for future use. You have to try them if you haven’t already! One of our favorite uses of the frozen green Chile in the freezer throughout the year is the Hatch Green Chile Stew! I’ve ordered them online when I have missed the harvest.

I’ve ordered them form Hatch Chile Store many times. You can get them fresh or roasted, you can get them peeled and chopped, frozen which I prefer these days.

Green chile, just like Red chile is available in mild, medium, or hot. If you aren’t familiar with these chiles, I’d start with mild and medium. I have used Hot before and have not been able to eat it because it was fire. So I usually buy mild and medium and depending on the heat of the medium, I’ll add some medium because a little heat is good. You may be able to handle a lot of heat. My husband could…..but I can’t do too hot.

I like both recipes. They are both absolutely delicious. You need nothing to serve with this stew except for some flour or corn tortillas. You’ll need a lot of tortillas to sop up the ever last bite of this Chile goodness!

What do you need for this dish?

  • olive oil or vegetable oil
  • pork shoulder
  • onion
  • garlic
  • flour (if you are gluten free a masa slurry will work)
  • fresh tomatoes
  • Hatch green chiles
  • jalapeno
  • salt
  • pepper
  • sugar
  • chicken or beef broth
  • *Potatoes are optional…they are not traditional, but I love the addition of potatoes

Ingredients

  • 2 tbsp olive oil or vegetable oil
  • 2 lbs pork, cut into 1-inch pieces (I use pork butt, shoulder)
  • 1/2 Cup onions, chopped
  • 1 clove Garlic, minced
  • 1/4 cup Flour (if you are gluten free a masa slurry will work perfectly after the pork is tender and your stew has completed)
  • 2 cups fresh tomatoes, peeled and chopped
  • 2 Cups fresh green chiles, roasted, peeled and chopped or 2 cups frozen green chiles (or good quality in a Jar like 505 Southwestern)
  • 1 fresh jalapeno pepper, chopped
  • 1 tsp salt
  • 1 tsp freshly ground black pepper
  • 1 tsp sugar
  • 1 cup Chicken or beef broth (more if needed)
  • 2-3 large russet potatoes, cut into the size of your choice The potatoes are optional…they are not Original, but I like my stew with potatoes

Instructions

  • Heat olive oil in 4-quart Dutch oven with cover. Add pork and cook until lightly browned. Add onion and garlic and stir with meat. Add flour and stir 1-2 minutes. Add tomatoes, green chiles, jalapeno (if using), salt, pepper and sugar. Mix to incorporate. Add broth. Lower heat. Cover pot and simmer for 1- 1 1/2 hours until meat is tender. Serve with flour tortillas, or corn if you prefer.

For this recipe you can either cook your chicken or buy rotisserie chicken. Canned Hatch green chile is typically found in the Mexican food section of stores, the brand 505 offers jarred green chile  and they are found in the frozen section of many stores. Another option is to order them from a New Mexico store that ships them to your location. Personally, I order them annually. If you’re lucky, you might live near a store that roasts them for you during the season. Additionally, you will need cream of mushroom soup, cream of chicken soup (or just one of them), corn tortillas, cheese, and chicken broth. Personally, I like to prepare my own stock and freeze it in plastic containers for later use.

I first tried New Mexico Green Chile Chicken Casserole in Las Cruces while my sister resided there, where it enjoys great popularity. I thoroughly enjoyed it when she prepared it, and I continue to make it myself! We prefer to use hatch green chile, and the spiciness of the dish can be adjusted based on whether you opt for mild, medium, or hot chile.  I tend to combine medium and mild to get a little heat but not too much.  I have tried some New Mexico Hatch chiles very hot.  

I have used The Hatch Chile Store to purchase if we haven’t brought them home with us. Their link is: https://www.hatch-green-chile.com . HOWEVER, you can buy green chile in cans on or in the freezer section of your grocery store.

This is comfort food at its best. I like to serve it with pinto beans, https://the2spoons.com/pinto-beans-for-refried-beans/s: shredded lettuce and tomatoes, and some tortilla chips.

Ingredients

  • 1 Onion, chopped
  • 1 Can Cream of mushroom soup
  • 1 Can Cream of chicken soup
  • 2 Cups Hatch Green chile (if hot you may want to reduce the amount to 1 cup, then see how much more you want, I used 1 1/2 with hot chiles)
  • 2 Cups Chicken broth
  • 2-3 Cups Chopped or shredded chicken
  • Salt and pepper to taste
  • 1 Tsp Ground cumin
  • 12 Corn tortillas
  • Grated cheddar for layering and topping
  • 12-15 corn tortillas

Instructions

  • Combine the chopped onion, soups, green chiles, chicken stock and salt and pepper to taste in a saucepan. Cook for 15 to 20 minutes until the onions are soft. You don’t sauté the onions first. After the onions are soft add the chicken, stir to combine and set aside. 
  • Preheat the oven to 350 degrees F. Get your casserole dish, sauce, cheese and tortillas together to start layering. 
  • In a 9×11 casserole or pan put a thin layer of the sauce on the bottom. Top with 6 tortillas (they’ll overlap a little). 
  • Top with a layer of sauce. 
  • Add a layer of cheese, a little sauce, then top with 6 more tortillas. 
  • Add the remaining sauce and cheese. 
  • Cover with foil that you have sprayed or rubbed a little oil on so it won’t stick to your cheese.  Bake for 30 minutes, then remove the foil and cook about 10 minutes longer. 
  • Serve with pinto beans or refried beans, Mexican rice or even a nice salad and tortilla chips.

I’ve never been a fan of chicken enchiladas. I am now.

I was googling “what to do with leftover rotisserie chicken” and ran across a picture of chicken enchiladas that looked so delicious! I knew right then that I had to make them. I’m definitely glad I did.

I think that the reason I never liked chicken enchiladas was because the filling was dry. It was like one of those choke moments that your eating an overcooked and stringy chicken breast. No fat, no flavor, just a couple of strips of shredded chicken rolled into a cold tortilla then topped with a sauce. These are filled with shredded chicken, cheese, onions and green chiles sauce. Delicious.

what should i serve with these enchiladas?

I served pinto beans that I use to make refried beans. It is how my friends in Mexico make them. Pinto beans, white onion, a little lard and salt. So delicious and I make them in my instant pot. Easy Refried Beans from Homemade Pinto Beans.

I also made a simple rice which I took a cup of rice, browned it in a little oil, added one Knorr Tomato Chicken Bullion and 2 cups water. I lowered the heat to simmer and cooked about 20 minutes or until tender. I have a more detailed Spanish Rice Recipe that is delicious! Easy Essential Mexican Rice. I have another recipe I haven’t posted yet, but I will soon that calls for fresh tomatoes, jalapenos, onions, garlic, and cilantro.

what ingredients do I need ?

  • oil
  • onions
  • green chile
  • chicken breast or leftover rotisserie chicken
  • cumin
  • salt
  • pepper
  • flour tortillas
  • cheddar cheese (I used Monterrey Jack) either or or a mix
  • butter
  • flour
  • chicken broth
  • sour cream
  • green chile

For the chicken, I used a rotisserie chicken leftover, but you can use a pound of chicken breast instead.

I used Hatch green chile, mild that I had in the freezer that I actually purchased from a company in New Mexico. You can use the canned green chile also. If you can’t find green chile in your area this is one of the companies I have ordered from. https://freshchileco.com/.

How do you assemble?

The first thing I’m going to do is prepare my stuffing ingredients for the chicken enchiladas. The reason for that is this sauce has a dairy product in it, the sour cream, so you want to have your enchiladas stuffed and rolled before you make your sauce. I combined the chopped chicken, some of the cheese, finely chopped white onion, and a little green chile.

Then I heat my Comal, griddle or skillet to medium high and heat my flour tortillas so they will be pliable. I fill each tortilla with about 2 tablespoons filling , roll them, and place them seam side down in a casserole dish. Then I ladle the sauce to completely cover and top with cheese, place them in a hot oven and cook until the cheese is melted they are bubbling on the sides.

Ingredients

  • 2 tbsp olive oil
  • 1 lb chicken breast boneless and skinless (or shredded rotesserie chicken)
  • 1/2 white onion finely chopped
  • 1 tbsp ground cumin
  • salt and pepper to taste
  • 8 flour tortillas
  • 2-3 cups shredded cheddar cheese or a combination of cheddar and monterrey jack cheese
  • 4 tbsp butter
  • 4 tbsp flour
  • 2+ cups chicken broth
  • 1 cup sour cream
  • green chile

Instructions

  • Preheat oven to 400 degrees.
    Warm olive oil in a saute pan, over medium heat. Cut chicken breasts into small pieces, season with cumin, salt and pepper, and saute in olive oil until cooked through. If you are using rotesserie chicken, shred the chicken and place in a bowl.
    Combine the chicken in a bowl with the chopped onion, a cup of cheese and about a cup of green chile.
    Heat a comal, griddle or a skillet to medium high. Place the flour tortillas, one or two at a time and heat until soft and pliable, turning them to both sides.  Add 1/8 cup of chicken mixture to the center of the tortillas.  Roll the filled tortillas and place seam-side down in a greased casserole dish.
    In a small saucepan, melt butter over medium heat. Sprinkle in flour, and whisk to form a roux. Slowly add in chicken broth, whisking constantly until incorporated and no clumps remain. Remove from heat.
    Add in sour cream and diced chilies and stir to combine. Add salt and pepper to taste. Pour sauce over rolled tortillas. Top with remaining cup of shredded cheese.
    Bake in preheated oven for 20 minutes.

Of course, the homemade buns are not necessary, but they make a huge difference! If you don’t make them, get a good potato bun from your deli. A great potato bun I’ve bought on line before is Martin’s Potato Bun. https://amzn.to/3iQ5SJe. Buying them on line isn’t cheap, but they are the best potato buns I’ve ever had. But, a regular hamburger bun will work!

I’m hoping that you bought green chile in the store recently as we’ve just passed this years season. If you didn’t, you can use the canned Hatch Green chile or you can find it in the freezer section of many stores. The green chiles are roasted and the outside skin is removed leaving a beautiful chile!

Every time we are in New Mexico, green chile cheeseburgers are a requirement. Many times we are there during chile harvesting season and we load up and bring them home to keep in the freezer.

They come in mild, medium or hot. It’s just a personal preference as to the heat level you like.

I cooked this on a charcoal grill, but a gas grill will be great too, whatever you have available. I use 80/20 ground beef for any burger recipe If you’re going to eat a burger, you have to have that fat for flavor. If I’m making a smash burger I may even use a 73/27 ground beef which is 27% fat. Honestly, I won’t make a burger with any number above 80/20.

I also used two cheeses, cheddar and muenster. Also, you want to be sure and place the green chile on top of the meat patty, then place the cheese over the green chile.

  • Grill of your choice

Ingredients

  • 1 1/2 lb ground beef (80/20 or 73/27)
  • 1 tsp salt
  • 1 tsp cumin
  • 1 tsp chili powder
  • 3 cloves garlic
  • 3 tsp olive oil
  • salt and pepper
  • 1 medium yellow onion, sliced
  • 4 whole Hatch Chile (You can use chopped if that is what is available to you)
  • 4-8 slices cheese of your choice (I used cheddar and Muenster
  • 4-5 Buns
  • lettuce
  • tomatoes
  • chipotle mayonnaise

Instructions

  • In a medium bowl combine ground beef, salt, cumin, and chili powder. Mix with hands to combine. Form into four 1/3 lb patties.
    When ready to cook, Prepare the grill of your choice.
    Toss the garlic with 1-1/2 teaspoons oil and a pinch of salt and black pepper; seal them in foil to form a pouch. Brush the onions with the remaining 1-1/2 teaspoons oil and sprinkle with salt and black pepper to taste.
    If you are using chile from the fresh point, grill the whole chiles, onions and garlic for about 15 minutes, until the chiles are blackened all over (turning them every 5 minutes), and the onions are tender and grill-marked (turning them, and the garlic pouch, after 7 or 8 minutes).
    Place the chiles in a bowl, cover with a plate or plastic wrap, and steam the skins loose, about 10 minutes. Peel and seed the chiles, chop finely and transfer to a medium bowl. If you are using purchased chile, most likely this process has been completed, You can purchase whole green chile that has been charred and skins removed, or the same with the canned chopped chle, they are ready to go. The freezer section usually has chopped ready to use also.
    Meanwhile, finely chop the garlic and the onions and add to the chiles. Add 1/2 teaspoon salt, stir to mix, and set aside until ready to use.
    Place the burger patties on the grill and cook each side 4 minutes or until desired doneness (140 degrees F for medium). In the last minute or two, top each patty with the chile mixture, then cheese to melt.
    Lightly toast the burger buns if desired.
    To build the burger, place patties on burger buns, spread the chipotle mayonnaise, layer the bottom with lettuce and tomato, and top with your burger that has the green chile mixture and cheese. Enjoy!

Chipotle Mayonnaise

  • Combine one cup mayonnaise with one chipotle chile with 1 tsp sauce from the can.

Seriously, if you aren’t making breakfast tacos, you are missing out on a quick and delicious meal. Everything you want in a tortilla!! These are loaded with potatoes, chorizo, Hatch Green Chile, eggs and cheese! All the delicious ingredients that make a perfect breakfast. You could have added refried beans to the tortilla before you piled on all the other ingredients. Fresh diced tomatoes and even shredded lettuce would have been great also and of course, sliced avocados. I didn’t know if I’d eat a whole avocado, I already had a half in the refrigerator that I had kept too long, so I didn’t want to waste the other half. And honestly, probably the real reason is that I don’t think the avocado would have really enhanced these tacos. There are so many flavors going on in these tacos.

The Hatch Green Chile’s I used we’re fresh/roasted that I had frozen. I just used a couple in this recipe. I always have green chile ready to use in my freezer. I purchased these from my local HEB in Texas, who roast them for you during season. When I can’t get them fresh/roasted I order them on line and one of my favorite companies the Hatch Chile Company. Ingredients

  • 1 medium potato, diced small
  • oil for pan frying the potatoes
  • 6 oz chorizo
  • 1 can hatch green chile
  • 4 eggs beaten
  • cheese of your choice (I prefer medium cheddar or Monterrey jack)
  • salsa for serving
  • Mexican Crema (optional)
  • avocado, sliced (optional)
  • salt and pepper
  • 4 Flour or corn tortillas (I used homemade flour)

Instructions

  • Peel and dice your potato. Heat a non stick skillet and add just enough oil to cover the bottom. Add your diced potatoes , a little salt and pepper to the skillet and allow them to brown a little on medium heat. Turn them and place a lid on the potatoes and lower the heat. Allow them to cook with the lid on at a low heat until tender. Remove the lid, turn you heat up and finish browning, turning and flipping them.
  • If your skillet is large enough, move the potatoes to one side and add the chorizo to the other. Cook the chorizo for a few minutes until done. You can also remove the potatoes, then add them back in after your chorizo is cooked through. Combine the potatoes and chorizo.
  • Whisk your eggs with a little salt and pepper. The chorizo is a little salty, so lightly. Move the potatoes and chorizo to one side and pour your eggs in. Allow them to start to set on the bottom, then with a spatula, fold over continuously until set. Don't over cook. Combine the ingredients and top with your choice of cheese.
  • Heat your tortillas in a hot skillet or a gridle. Fill the tortillas with the mixture. Fill each tortilla with the mixture. Top with your favorite salsa and Mexican crema or sour cream if desired. Serve sliced avocado along side.
