I call this 2 step potato salad because I literally make it in two steps. Wow, what a difference it makes too! You know how you eat potato salad sometimes and there are lots of ingredients but when you bite into a big potato there is no flavor in the potatoes!

Because I want my potatoes to be well seasoned and flavorful, I make it in 2 steps. While my potatoes are still hot I add my seasonings, white or red wine vinegar and a little mayonnaise. I roughly mash the potatoes just to break them up so that all the flavors will be in every single bite. I then store in the refrigerator for a while to allow the flavors to meld. Another reason I do this is because in this case I used red potatoes which are waxy and the seasonings will not get into the potatoes. I have found that if you allow your potatoes to cool then add your vinegar and mayonnaise, you will have a watery salad. This way it is creamy and so flavorful! So good.

I made this over the weekend with my 3 ingredient fried chicken. I think potato salad is the perfect side dish for fried chicken especially in the summer time. Pack up a picnic lunch of fried chicken, along with this perfect side, some bread, cheeses, maybe some wine or beer, fresh summer fruit and you will have the perfect meal!

Southern Potato Salad

Ingredients
  

  • 7-8 whole Youkan Gold Potatoes
  • 2 tbsp red wine vinegar or apple cider vinegar
  • 4 hard boiled eggs, diced
  • 1/4-1/2 red onion, diced
  • 1/2 red bell pepper, diced
  • 1/2 green pepper, diced
  • 1-2 celery stalks, thinly sliced
  • 2-3 tbsp dill relish (depends on your preference)
  • 1 tsp sweet relish
  • 1 tsp fresh dill, chopped or a pinch of dried dill
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp Old Bay (optional)
  • pinch of cayenne (optional)
  • pinch of smoked paprika
  • 1/2 tsp yellow mustard
  • quality mayonnaise like Hellman's or Dukes
  • salt and pepper to taste

Instructions
 

  • Add the potatoes whole, skin on to a pot of salted water. Cook until fork tender. When done, drain and place the potatoes in a large bowl that you can easily mix your ingredients. When the potatoes are cool enough to handle, yet still warm, remove the skin. If you leave some of the skin on that's fine.
  • Dice your eggs and add to your potatoes that you have allowed to sit with the vinegar and a little salt and pepper. Add your onions, bell peppers, celery and your dill and sweet relish. Add your seasonings, your mustard, and start with a little mayonnaise at a time until you reach the creaminess you desire. Check for salt and pepper.
  • Place your potato salad in a serving dish and sprinkle with a little smoked paprika. Chill until ready to serve.

I cooked these Fresh Green Beans and New Potatoes in my Instant Pot and it literally took 15 minutes! I sautéed onion and bacon ends first, then I added my beans and potatoes, a little water along with seasonings, and set the pressure cooking time for 15 minutes! They were perfectly cooked! Oh, I forgot to mention that these potatoes were fresh from a garden. They were at our church grown by the youth group who are raising money for camp! There’s just something about some local grown new potatoes.

I love green beans! Sometimes I make them crispy with lemon and garlic, but sometimes I want the country style like these, super tender in a delicious bacon flavored-broth, the kind I remember my Mom making growing up.

Country Style Fresh Green Beans and New Potatoes

Ingredients
  

  • 1 1/2-2 lbs fresh green beans, ends trimmed and washed
  • 4-6 new potatoes, depending on the size
  • 2-3 strips bacon, or bacon ends, cut in 1 inch pieces
  • 1/2 onion, diced
  • 2 tbsp extra virgin olive oil
  • 1 tsp salt
  • fresh black pepper
  • 1-2 sprigs fresh thyme or about 1/2 teaspoon dried crushed
  • water or vegetable stock

Instructions
 

  • I cooked the green beans and new potatoes in my instant pot, but the same instructions apply if you are cooking them stovetop, except for the cooking time.
    Trim your beans and wash them. You can either completely peel your potatoes or you can cut a strip around like I did. If they are small, leave them whole, but large I'd half or quarter, so you have a uniform potato size so they will cook evenly.
  • Add the extra virgin olive oil to your pan or instant pot. Add the bacon and onions and sauté until the bacon fat has rendered and the onions begin to very lightly brown.
  • Add your beans and potatoes and enough water or vegetable stock to almost the top of the beans, maybe 3/4 way. They do not have to be completely covered because they are quickly going to cook down and you don't want too much liquid.
  • Add your salt and thyme, and set your Instant Pot to pressure cook for 15 minutes, or bring your stovetop pan to a boil, then reduce to a simmer and cook 30 minutes or so until the green beans and potatoes are tender.
  • When the cooking has finished, check for salt and add fresh cracked black pepper. Serve with almost any entrée. Enjoy these country style green beans.

I love this Fried Zucchini. It is tossed in some beaten eggs, then breaded in panko and parmesan. What is there not to love? These are a perfect side dish, appetizer or just a snack dipping into your favorite dressing like your favorite ranch or blue cheese. Yes!

Oh, so good! Simple Fried Zucchini

Whether you serve this dish as a side dish or as an appetizer, I think the perfect dressing to use is a Ranch Dressing, and honestly, I think you can’t beat the Hidden Valley Ranch with the packages. I keep that dressing in my refrigerator for foods like this. There are some great recipes out there for homemade ranch dressing, but who needs to when all your seasonings are in a packet! https://www.hiddenvalley.com

Ingredients
  

  • Olive oil for frying
  • 1 3/4 cups freshly grated parmesan
  • 1 1/2 cups panko (Japanese breadcrumbs)
  • 3/4 tsp salt
  • 2 large eggs
  • 3 medium zucchini, cut into 1/2 inch wide strips

Instructions
 

  • Pour enough oil into a large frying pan to reach a depth of 2 inches. Heat the oil over medium heat until a deep-fry thermometer registers 350 degrees F.
    Stir 1 1/2 cups Parmesan, the panko, and salt in a medium bowl to blend. Whisk the eggs in another medium bowl to blend. Working in batches, dip the zucchini in the eggs to coat completely and allow the excess egg to drip back into the bowl. Coat the zucchini in the panko mixture, patting to adhere and coat completely. Place the zucchini strips on a baking sheet.
    When the oil is hot, working in batches, fry the zucchini sticks until they are golden brown, about 3 minutes. Using a slotted spoon, transfer the fried zucchini to paper towels and drain.
    Arrange the fried zucchini on a platter. Sprinkle with the remaining Parmesan and serve.
