I love this Southern Creamed Corn. Granny and Granny Teakell made this creamed corn. Fresh corn cut off the cob cooked in a little bacon drippings, heavy cream, and a little sugar? Oh, my gosh! So good! It is creamy and a little sweet, still with texture from the corn kernels.

I made this Sunday with my Oven Fried Chicken and a few other Southern dishes. Allen loved it. And the great thing is I had a little left that I’ll add to Jalapeño Cornbread. Or what about Creamed Corn Fritters? Delish. I don’t have a link for them on my site YET, but I will. Ingredients
  

  • 2 tbsp bacon drippings
  • 1 cup heavy cream
  • 1 tsp cornstarch
  • 6 ears of fresh corn, shucked, stripped and scraped You could substitute a 32 ounce bag frozen
  • 1 tsp granulated sugar
  • salt and pepper to taste
  • 2-3 tbsp butter

Instructions
 

  • Melt the bacon drippings in a stainless or cast iron skillet on slightly over medium heat. Combine in a bowl the cream, whisk in the cornstarch, then add the corn, sugar and stir together. Pour into the hot bacon drippings and cook for about 20 minutes, or until reduced and thickened, stirring frequently and mashing the corn. Season with salt and pepper to taste and combine. Stir in 2 to 3 tablespoons of butter to finish.

We, meaning the two of us, ate these Salted Caramel Brownies in two days!! No guilt either! There was just something about the chocolate combined with salted caramel that you just couldn’t stop eating!! Lol! Truth!

Don’t let homemade caramel intimidate you. It is easy and makes such a difference in these brownies. You just want to stay close, not cook on too high of a heat to prevent burning. And the added salt? Addictive! This Carmel starts with melting raw sugar to a brownish color, adding butter, heavy cream and sea salt! That’s all! It’s juat about the technique. Do t let it burn, don’t stir too much, know that’s it’s supposed to bubble when you add the butter.

Decadent Salted Caramel Brownies

I’ve found that it really does make a difference that when a recipe calls for chocolate the better the product, the better your end results. This brownie recipe calls for cocoa powder and I used Ghiradelli 100% baking cocoa https://images.heb.com/is/image/HEBGrocery/prd-small/ghirardelli-100-unsweetened-cocoa-000275471.jpg. There are chocolates even better I’m sure, Ghiradelli is usually my go to and is reasonable for everyday baking.

Ingredients
  

For the Brownies:

  • 3/4 cup good cocoa powder
  • 1 1/2 cups sugar
  • 12 tbsp unsalted butter
  • 1/2 cup all purpose flour
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 1 tsp brewed coffee (optional)
  • 1/2 cup bittersweet chocolate disks or chips

For the Salted Caramel:

  • 1 cup granulated sugar
  • 6 tbsp unsalted butter, room temp, cut into tablespoons
  • 1/2 cup heavy cream, room temp
  • 1 to 1 1/2 tsp sea salt ( a fine crushed sea salt or flaky seasalt works well)

Instructions
 

Making the Caramel:

  • In a medium saucepan, heat the sugar on medium-high heat for about 5 minutes. Use a spatula to occasionally stir the sugar, getting to the bottom of the pan. At first, the sugar will be lumpy, but will soon melt and start turning a brownish color. Don’t stir too often, just enough to keep everything evenly cooking.
    After 5 minutes, the sugar should become fully melted. Once it becomes a dark amber hue, remove from heat immediately and stir in butter. The mixture will violently bubble. You’re doing it right.
    Use your spatula to stir the butter and sugar until they melt together completely. This can take 1-2 minutes.
    Next, pour in the heavy cream and sea salt. You can use 1 to 1½ teaspoons, depending on how much saltiness you like. Use your spatula to stir until everything is combined. Place back on the stove for about 30 seconds, stirring the whole time. Remove from heat and allow to cool for 15 minutes.

The first day of Spring screams Homemade French Vanilla Ice Cream which is essential for all those peach and berry cobblers we’ll be making! This recipe is from Ben & Jerry Ice Cream & Dessert cookbook and this recipe is my favorite! It is yummy and simple to make! Here’s the link for their book if you’re interested in other ice cream recipes.

This recipe is rich and creamy and only has 5 ingredients: EGGS, SUGAR, HEAVY CREAM OR WHIPPING CREAM, MILK, AND VANILLA. I use Mexican vanilla but a good pure vanilla is best.

Yummy, Essential Homemade French Vanilla Ice Cream

I make this ice cream with the Kitchen Aid Ice Cream attachment which is great. If you have a Kitchen Aid and you’re interested in this attachment here’s a link. https://www.kitchenaid.com/attachments/ice-cream. The attachment doesn’t make enough for a crowd, but for having homemade ice cream for several and to have it available in your freezer it is perfect.

This ice cream is perfect with my Cherry Pie https://the2spoons.com/delicious-cherry-pie/. Serve the pie warm, of course, with the ice cream melting over it. To die for! Also, serve with brownies, chocolate cake, peach cobbler, blackberry cobbler, or just a big bowl of ice cream, the options are endless. Hope you love this recipe as much as I do! Enjoy!

Ingredients
  

  • 2 large eggs
  • 3/4 cups sugar
  • 2 cups heavy or whipping cream
  • 1 cup milk
  • 2 tsp vanilla extract

Instructions
 

  • Whisk the eggs in a mixing bowl until light and fluffy, a couple of minutes.  I use the wire whisk with my Kitchenaid Stand Mixer.   Add the sugar, a little at a time, then continue beating with the whisk attachment until completely blended, and the mixture is creamy and frothy. Pour in the cream, milk, and vanilla and combine. 
    Transfer the mixture to an ice cream maker and freeze following the manufacturer’s instructions. Makes 1 Quart. Any unused ice cream, store in the freezer in a plastic container. 
    I use the Kitchen Aid Ice Cream Maker attachment.  You store the bowl in the freezer until ready to use.

Ok, I don’t know who Wilda Marie is, LOL! I purchased Slap YA Mama Cajun Seasoning https://slapyamama.com the other day and this recipe was on the back!! I’m a label reader! Yes!

I was making my Chef Paul Prudhomme Roasted Pork and immediately thought how perfect these potatoes would be with that roast, and I was right. This recipe does call for smoked sausage that I will add at a different time, but I didn’t want to add the sausage in the side dish I was using for my Roasted Pork. Creamy from the mushroom soup, loaded with peppers and onions, and of course those cajun spices. You want to add the cajun spices to taste because they do have cayenne.

Easy – Wilda Marie’s Lazy Potato Casserole

Serve these potatoes with my Roasted Pork or with other meat as a side dish. Add the sausage and it is a meal in itself!

Ingredients
  

  • 4 cups diced potatoes, peeled
  • 1 cup chopped bell peppers
  • 1 cup chopped onions
  • 1/2 cup green onion tops
  • 1 10 oz can cream of mushroom soup
  • 3/4 cup water
  • 1-2 cups diced smoked sausage
  • 1/2-1 tbsp “Slap ya Mama” Cajun Seasoning

Instructions
 

  • Preheat oven to 425 degrees.  Mix all ingredients in 3-quart casserole dish.  Cover and bake for 45 minutes, stirring occasionally.  Remove cover and bake an additional 15 minutes.

When you’re craving a meaty, savory comfort-food classic, this dish will accomplish that need! Unlike the traditional ground lamb, I used ground beef and it is delicious. Oh, and that mashed potato topping? To die for!

Sometimes called a cottage pie, this is a meat pie with a crust or topping of mashed potato. The recipe has many variations, but the defining ingredients are minced red meat, cooked in a gravy or sauce with onions and sometimes other vegetables, such as peas, celery or carrots, and topped with a layer of mashed potato before it is baked. The pie is sometimes also topped with grated cheese to create a layer of melted cheese on top.

What’s the Shepherd’s Pie history? It’s a common and inexpensive British dish originating from the sheep country in Scotland and northern England. It is a baked meat pie made with minced or diced lamb and topped with a thick layer of mashed potatoes. Ingredients
  

  • 2 lb russet potatoes
  • salt and pepper
  • 2 tbsp olive oil
  • 2 lb grund bef
  • 1 yellow onion, finely chopped
  • 3 large carrots, peeled and cut into 1/2 inch pieces
  • 3 celery stalks, cut into 1/2 inch pieces
  • 2 garlic cloves, minced
  • 2/3 cups white wine
  • 1 1/2 cups chicken or beef broth
  • 2 tsp tomato paste
  • 1 1/2 tsp worcestershire sauce
  • 1 tsp dijon mustard
  • 1 tbsp finely chopped fresh rosemary or thyme
  • 1 cup frozen peas
  • 4 tbsp unsalted butter
  • 1 1/4 cups half-and-half
  • 1/2 tsp ground nutmeg
  • 1/2 cp parmesan cheese

Instructions
 

  • Peel and quarter the potatoes. In a saucepan over high heat, bring the potatoes in salted water to a boil. Reduce the heat and simmer until the potatoes are tender, 20 to 25 minutes. Drain and keep warm.
    2. Meanwhile, in a large sauté pan over medium-high heat, warm 1 Tbs. of the oil. Add the beef and season with salt and pepper. Sauté, stirring occasionally, until browned, 7 to 10 minutes. Transfer to a bowl and discard the excess fat from the pan.
    3. In the same pan over medium-low heat, warm the remaining 1 Tbs. oil. Add the onion and a pinch of salt and cook stirring occasionally, until caramelized, about 10 minutes. Add the carrots, celery and garlic and cook, stirring occasionally, until the carrots are just tender, about 5 minutes. Raise the heat to medium-high, add the wine and simmer until reduced by half, about 5 minutes. Stir in the broth, tomato paste, Worcestershire sauce, mustard and 1/2 Tbs. of the rosemary. Cook, stirring occasionally, until slightly thickened, 6 to 8 minutes. Add the peas during the last minute of cooking. Return the beef to the pan. Season with salt and pepper. Remove the pan from the heat and cover to keep warm.
    4. Meanwhile, place a rack in the upper third of the oven and preheat to 375°F (190°C). Transfer the potatoes to a large bowl and mash with a potato masher. Add the butter and half-and-half and stir until the mixture is well blended. Stir in the nutmeg and season with salt and pepper.
    5. Spread the filling evenly in a 9-by-13-inch (23-by-33-cm) or 5-qt (5-l) capacity baking dish. Spread the mashed potatoes evenly on top. Sprinkle with the cheese and the remaining 1/2 Tbs. rosemary. Bake until the potatoes are lightly browned, 15 to 20 minutes. Let cool for 5 minutes, then serve warm.

We love this Creamed Spinach! Instead of heavy cream, I add sour cream and a little cayenne to spice it up! This recipe is just for 2 so you can increase the ingredients and make it for more. You want to squeeze out as much water as you can to prevent your creamed spinach from being too watery.

This is the perfect side dish for your steak dinners at home. I served this with grilled steaks the other night, of which more times than not, I serve this when I cook steaks on the grill. Allen loves this too, which is always a plus!

There is a restaurant in Dallas called the Celebration. In the 1970s or 1980s they served a spinach casserole that I developed this recipe from, and I think it is how they did it, including the cayenne that I add. That was probably one of their most popular dishes and I absolutely loved it!

  • 8 cups raw spinach
  • 2 tbsp sour cream
  • pinch of salt and pepper
  • 1/2 pinch cayenne peper
  • 1/4 cup grated medium to sharp cheddar cheese
  • oil to saute spinach

Instructions
 

  • Preheat the oven to 375 degrees F. Pour a thin coat of oil in a skillet and heat to medium.  Add the spinach and cook until wilted. Drain in a colander, pressing out as much water as you can.  Return to a bowl and add the sour cream, salt, and pepper to taste and the cayenne pepper.  Place in a buttered or oiled casserole and top with the cheese.  
    Bake until the cheese is melted.
