quick & easy avocado salsa.

Avocado Salsa

I love an avocado salsa and this recipe is quick and easy! The ingredients are avocados, jalapeno, vinegar, lime juice, salt, onion, cilantro, water to emulsify, that’s it!

The recipe calls for one or two jalapenos. I start with one then add more if I want a little more heat. Same with the lime juice. I start with the juice of one lime, then add more. I really love the lime taste.

Ingredients Method

Ingredients
  

For the Avocado Salsa
  • 2 ripe avocados
  • 2 cups water
  • 2 tbsp white wine vinegar or white vinegar
  • juice of one to 2 lemons
  • 1-2 jalapenos, seeded and stemmed
  • 1/2 white onion
  • 1/2 cup cilantro
  • 1/2-1 tsp salt

Method
 

  1. Place all the ingredients for the avocado salsa in a food processor. Start with the juice of one lime and one jalapeno, then adjust after processing. Process until smooth, a couple of minutes. Check for salt, lime juice and spiciness and adjust to your preference. I used 2 limes and 2 jalapenos. I like the tartness of the jalapenos and we like a little heat from the jalapenos. If not using immediately, store in the refrigerator

This Roasted Tomatillo Salsa is one of my favorite salsa’s. It really is the best. I like it with some heat but not to the point that I cry when I eat it! LOL!! You know how that is with some salsas. Luckily, you can adjust the heat with the number of Jalapeno or Serrano Chile’s you add.

Are you familiar with tomatillos? Here’s a brief explanation.

The tomatillo, also known as the Mexican husk tomato, is a plant of the nightshade family bearing small, spherical and green or green-purple fruit of the same name. Tomatillos originated in Mexico and were cultivated in the pre-Columbian era. A staple of Mexican cuisine, they are eaten raw or cooked in a variety of dishes, particularly salsa verde.

The Best Roasted Tomatillo Salsa

Tomatillos can be used in their raw state or roasted for a salsa which i did.

Along with the tomatillos, I roasted garlic and onions to add to the salsa. Ijust drizzled them with a little olive oil before placing in the oven.

The Best Roasted Tomatillo Salsa

I also roasted the onions, garlic and jalapenos before processing all of the ingredients! This is a great Salsa Verde! Enjoy!

Roasted Tomatillo Salsa

Ingredients Method

Ingredients
  

  • 1 lb tomatillos, husk removed and rinsed
  • 1/2 medium white onion, halved
  • 1-2 jalapenos or Serrano's
  • 2 whole garlic cloves, peeled
  • 1/4 cup fresh cilantro
  • 1/4 cup water
  • 1/2 tsp kosher salt
  • 1/2 tsp ground cumin
  • juice of one lime

Method
 

  1. Turn your broiler on and roast the tomatillos, chile(s), onion and garlic on a rimmed baking sheet 4 inches below a very hot broiler, until blotchy black and softening (they’ll be turning from lime green to olive), about 5 minutes. Flip them over and roast the other side. Cool, then transfer everything to a blender, including all the delicious juice the tomatillos have exuded during roasting. Add the cilantro and 1/4 cup water, then blend to a coarse puree. Scoop into a serving dish. Season with salt, usually 1/2 teaspoon.

Easy, Fresh Pico de Gallo

Pico de Gallo, what can I say? It’s delicious. It’s beautiful. It’s the perfect condiment for so many Mexican or Tex-Mex dishes like fajitas, tacos, Carne Asada, eggs, and so many others. Pico adds a little texture and acidity to a dish. It is also a perfect way to use our gorgeous tomatoes from your garden. I made this pico to go with my Steak Quesadillas. It is the perfect accompaniment. Simple, but so flavorful. A little spice from the jalapeño, a little tart from the lime juice, salty and a little sweet from the tomatoes. Easy, Fresh Pico de Gallo

I don’t make a lot at a time because it will wilt pretty fast and become watery. Place any unused in an airtight container and try to use the next day.

Ingredients
  

  • 2-3 cups tomatoes, diced
  • 1/2 onion, finely diced
  • 1 jalapeno, seeded, stem removed, finely diced
  • juice of 1/2 to 1 lime depending on your taste
  • 1 garlic clove, finely minced
  • 1 handful of cilantro

Method
 

  1. Combine all the ingredients in a bowl. Season with salt and pepper to taste.

OOH! This Spicy Corn Salsa is so good and the perfect addition to your grilled fish or meats this summer! Colorful, spicy, it just adds a punch to your dish!

I grilled Skirt steak and shrimp the other day for Taco Tuesday and I added this corn salsa. The lime juice, jalapenos, fresh tomatoes, and corn are just absolutely amazing with the fresh shrimp and the skirt steak. This is a go-to salsa that I make year round, but I really like to make it when fresh corn and tomatoes are in season! What is better than sweet corn and fresh tomatoes from the garden? Maybe fresh corn and tomatoes with lime juice squeezed over them. Yum is all I can say and makes my mouth water just describing it!

Ingredients Method

Ingredients
  

  • 1/2 red onion, finely diced
  • 2 roma tomatoes or 1 large tomato, diced
  • 1/2-1 jalapeno, finely diced
  • 2 tsp Canned diced green chile like hatch or other brand (optional)
  • 2/3 cup fresh corn or frozen corn
  • juice of one lime
  • salt and pepper to taste

Method
 

  1. Combine all the chopped vegetables.  Add the lime juice and season with salt and pepper to taste. Store in the refrigerator until ready to use.

Pico de Gallo with Avocado

I love Pico de Gallo!  It is fresh, salty, has a kick from the jalapeno, the lime juice just brings it all together...it is the perfect addition to your tacos, grilled meats, grilled fish, grilled shrimp, on and on!! 
Pico de Galla is special to me, especially with avocado because I have friends that live in Cabo and when i visit them we cook! We cook foods of Mexico! 
I never put avocado in my pico until I was with them.  We were grilling Al Pastor or Carne Asada they made pico and added a lot of avocado.  It was amazing....you know, there was no need for additional guacamole. 
The perfect condiment!

Ingredients Method

Ingredients
  

  • Tomatoes
  • Purple Onions
  • Jalapeno
  • Avocados
  • Cilantro
  • Salt
  • Lime juice

Method
 

  1. I didn't add amounts because you can use this recipe to make any amount. Dice the tomato, onions, jalapeno, cilantro and toss. Dice the avocado and add to the mixture. Add the lime juice and a little salt. Start with one lime and a little salt, then adjust as needed or to your taste.   
    This won't keep a long time because all the ingredients are fresh but it won't last anyway...it is addictive!!
