I prepared this Avocado Toast with chickpeas and eggs because a friend of mine shared a picture of a similar dish she bought in Corsicana, Texas, and I was inspired to make my own version. I really enjoy this kind of toast! It has a tangy flavor from the lemon juice and a creamy texture from the avocado. It’s absolutely delicious and very satisfying. Although I’ve been making avocado toast for a while, I’ve never tried it with chickpeas before.

what ingredients are required for this delicious toast?

  • avocados
  • lemon
  • salt and pepper
  • extra virgin olive oil
  • garlic clove
  • chickpea
  • smoked paprika
  • eggs
  • sour dough or bread of your choice
  • flaky salt, red pepper flakes, furikake (optional)

I seasoned the chickpeas with spicy smoked paprika and cooked them in a hot skillet until toasted. I really enjoy chickpeas prepared this way, and they also serve as a delicious snack. If you haven’t tasted toasted chickpeas, especially cooked in a skillet, you should definitely try them as they offer great health benefits.

To prepare this tasty breakfast dish, begin by making the avocado spread using one avocado. Squeeze the juice of half a lemon into the spread and season with salt and pepper. Utilize fresh sourdough bread, preferably from the deli, as it toasts up nicely and turns crispy. Toast two slices of the sourdough bread, then drizzle them with extra virgin olive oil and rub them with a clove of garlic. Next, spread the avocado mixture onto the bread, followed by topping it with fried chickpeas and hard-boiled eggs. For an extra touch, add some homemade fresh basil oil. Enjoy the deliciousness!

This is a delicious breakfast with this beautiful poached salmon. Honestly I haven’t made this in a while and I want to make it for breakfast tomorrow!

Avocado Toast with Chickpeas and Eggs

Ingredients
  

  • 1-2 avocados ripe
  • juice of one lemon
  • salt and pepper to taste, divided
  • extra virgin olive oil for toasting the chickpeas and for drizzling on the toast
  • garlic clove
  • 1 cup chickpeas
  • smoked paprika, I used hot smoked paprika
  • 2 hard boiled eggs sliced
  • 2-4 pieces of a good bread like a sourdough or a homemade multi grain bread
  • fresh ground black pepper
  • flakey salt
  • red pepper flakes (optional)
  • Furikake (optional)

Instructions
 

  • Place the eggs in a saucepan with enough water to cover and bring to a boil. Reduce the heat to a medium boil, cover with a lid a little ajar and cook for ten minutes. Remove from the heat and submerge in cold water to stop the cooking. Peel the eggs and slice.
  • In a bowl, add the avocado and mash. Add the lemon juice and salt and pepper to taste.
  • Drain the chickpeas and pat dry. Sprinkle with the paprika. Heat the oil in a skillet and quickly toast the chickpeas. Remove from the pan and set aside.
  • Toast your bread and rub with the garlic clove. Place 2 pieces on a plate and drizzle with a little extra virgin olive oil. Top with the prepared avocado. Add the toasted chickpeas, then top with the sliced boiled eggs. Finish with a little red pepper flakes if desired, fresh ground black pepper and flake salt if you have. Bon Appetite!

#1 – delicious guacamole!

I love Guacamole! Last night we had fajita’s, which I’ll post later, and I made guacamole. If you don’t have a molcajete, you need one. I’ve had this for years. It is really heavy, I hate dragging it out of the cabinet, but it makes the best guacamole ever. It is a volcanic rock mortar and pestle and these have been around for thousands of years. I start this deliciousness by placing my garlic and some jalapeno in the bottom with some salt. The salt helps break down the garlic and pepper. I mash and break up until a paste has formed. I then add some chopped onion and I break up just a little but I don’t form a paste with the onion. I kind of like a couple of chunks of onion in mine. Then I add my avocado and stir to combine with the avocado, onion and jalapeno. I add the juice of one lemon or lime, salt and pepper to taste. Taste before you add salt because if you added salt when you were breaking up your ingredients you don’t want to over salt. I then add fresh chopped tomatoes and some chopped cilantro! That’s it and so good.

If you don’t have a molcajete you can do the same in a shallow bowl allowing you to break up ingredients with a fork. You can also use a food processor and use the pulse. I do think that breaking up these ingredients and making a paste allows the flavors to meld and you don’t have big chunks of onion, jalapeno or garlic.

Ingredients
  

  • 3-4 avocados
  • 1 jalapeno, stemmed and seeded, sliced (just use half if you don't want it too hot)
  • 2 tbsp onion, diced
  • 2 garlic cloves, diced
  • juice of one lemon
  • 1 tomato, diced
  • handful of cilantro, chopped
  • salt and pepper to taste

Instructions
 

  • Place the jalapeno and garlic in the molcajete if using or in a shallow bowl and add a pinch of salt. Mash the garlic and jalapeno with the salt to make a paste.
  • Add the onion and mash a little but don't completely break up. Add the avocado and combine. Add your lemon juice, stir and check your seasoning. Add salt and pepper as needed.
  • Add your diced tomatoes and chopped cilantro. Serve immediately or store in an airtight container in the refrigerator. I find that a container that doesn't leave too much room after your guacamole works the best or keeps it from getting brown on top quicker. Enjoy!

Amazing Dish! Scallops in Aguachile

This dish of Scallops in Aguachile (chile water) is amazing. If you love sashimi or ceviche, you will love this dish.

Here is an excerpt from Andrew Zimmerman’s website explaining what this dish is and where it originated.

“In the Pacific states of Sinaloa and Nayarit, aguachile de callo de hacha (scallops in chile water) is the Rolls Royce of ceviche dishes, in which the luxurious scallop is bathed in a fiery solution of lime and fresh green chile. Traditionally, only two vegetables—cucumber and purple onion—serve as a garnish, so the dish shines with just a finish of sea salt and pepper. Not surprisingly, the elegantly simple aguachile has become a favorite of modern Mexican chefs like Carlos Salgado, who is slowly evolving the flavors in his versions.

Two notes: Poached shrimp, sliced in half down the middle, will substitute beautifully for the scallops if you prefer that. And if you can’t find anise hyssop leaves (they are uncommon), fresh mint makes a delicious variation.”

Amazing dish! Scallops in Aguachile

This dish was inspired by a dish my friend made on my last trip to Cabo San Lucas. He layered thinly sliced fresh scallops from the ocean, very thinly sliced onion and added lime juice. He marinated the scallops and onions in the lime juice for about 15 minutes which cooked the scallops. Then he added avocado and cucumber and served this delicious dish with tortilla chips. I’d say it was between sashimi and ceviche. When I returned from Cabo, I did a little research, ran across the original recipe with an aguachile and decided I’d take his recipe a step farther.

Such a delicious and refreshing dish for the summer! You can substitute shrimp as stated before, but you want to make sure either the shrimp or scallops are very fresh!

I served this on fried Wontons. Oh, my goodness! So good. I added a little wasabi and I honestly can’t tell you how delicious this dish was.

Amazing Dish! Scallops in Aguachile

I hope you don’t let the idea of the lime cooking the scallops keep you from trying this dish. This is a crazy good dish, perfect for an evening meal or lunch, just a snack along with appetizers for your next party or before the main course.

Ingredients
  

  • 6 sea scallops
  • 3 limes, juiced
  • 1-2 avocado diced
  • 1/2 English cucumber, peeled, de-seeded and thinly sliced, seasoned with salt
  • 1/2 red onion, thinly sliced
  • 6-8 Fried crispy wonton wrappers

For the Aguachile Broth

  • 3 limes, juiced
  • 1/2 cucumber, peeled
  • 1 jalapeno, sliced and seeded
  • About a handful each of cilantro and parsley
  • 1 tbsp tarragon, optional
  • mint leaves, optional
  • 2 tbsp extra virgin olive oil
  • 2 tbsp water
  • 1 garlic clove
  • 1/2 tsp salt

Instructions
 

  • Using a sharp knife slice the scallops finely and add them to lime juice.
  • To prepare the Aguachile Broth, blitz the ingredients in a blender or food processor and strain through a fine mesh.
  • Arrange the scallops evenly on 2 plates and top with red onion, avocado & cucumber. Pour over the aguachile broth. Serve with fried wontons or tortilla chips!

My Ever So Easy Guacamole

When I need a fast easy Guacamole that is delicious, this is always my go-to. It literally has avocado, lemon juice, granulated garlic, salt and pepper.

Most times, when I’ve planned ahead, I’ll make the guacamole in a Mexican Molcajete, their version of a mortar and pestle. Here’s a link explaining the Molcajete if you are not familiar: https://www.directfrommexico.com/ccm570.html. Mine is a very heavy volcanic lava stone which is typical. I’ve seen lighter versions, but the lava stone helps grind everything together, pretty much pulverizing the ingredients, like the jalapeños and garlic.

When I make it with the Molcajete I add onions, jalapeños, tomatoes, garlic, and lots of cilantro. It’s a great recipe!

  • 1/2 tsp granulated garlic, plus more to taste
  • salt and pepper

Instructions
 

  • Half the avocados and scoop out into a bowl. Add the lemon juice, garlic, and salt and pepper. Combine mashing the avocado with a fork until creamy. Taste and adjust seasonings.

Amazing and Delicious Guacamole

I’ve been posting so many recipes for game day lately and I realized I had not posted a guacamole recipe! You have to have this on game day! Did you know they say there will be 65 Million avocados used on Super Bowl Game Day? Wow, that’s a lot of avocados!

I used a Molcajete for this homemade recipe, but if you don’t have one, you can mince the jalapeno, onions and garlic very fine. The Molcajete works really well though so if you can get one, you really should. You are able to grind the peppers and garlic with salt that really adds to the flavor.

We love guacamole, as I’m sure you probably do too. Sometimes, I just add lots of lemon with lots of salt and that is as simple as you can possibly get, but still a good to dip some chips in or to top your tacos!

However, when I want to make a special guacamole, or add a lot more punch I dig out my Molcajete and start grinding fresh serrano or jalapenos, white onions and garlic until a paste forms. Then I add lemon juice and some chopped tomatoes, season well and there you go! A delicious dip!

Love this recipe and it went so fast!! I wish I had a trick to keeping guacamole fresh longer, but I have learned when I use a container that the guacamole fits into the brim and you put the lid on tight, it last longer. I think the tightness of the ingredients in the container with a tight lid keeps air from coming in. Anyway, here’s my easy recipe!! Ingredients
  

  • 3 or 4 avocados
  • 1-2 serrano or jalapeno chile, seeded and finely chopped
  • 2 tbsp diced white onion
  • 2 garlic cloves
  • juice of 1/2 to 1 lemon (I just taste after I add a little)
  • 1 roma tomato diced
  • salt to taste
  • fresh ground pepper (optional)

Instructions
 

  • If using a molcajete, place your chile, garlic and a little salt in the bottom and grind until the desired consistency of your chile and onions. Add your avocado and mash.  At this point, it is pretty much done but you want to add your lemon and salt to taste.  After you get your seasoning and lemon as you want it, add the tomatoes and combine.  Store refrigerated until ready to use.

I cooked the salmon for the avocado toast to a medium rare. I didn’t want to over cook it so it would be dry. The medium rare salmon with the mustardy sauce, the avocado

And that mustard sauce! Oh wow! This sauce takes this avocado toast to a new level! The sauce is sweet and mustardy!

This Avocado Toast with poached salmon is absolutely one of my favorite toast! Toasted country bread, sliced avocado, medium rare poached salmon, topped with a sweet mustard dill sauce!

Ingredients
  

For the Poached Salmon

  • 1 Lb Salmon filet
  • Salt
  • 1/2 Cup White wine vinegar
  • 1 Shallot, peeled and thinly sliced, or a few slices of onion
  • Several sprigs of fresh dill or sprinkle of dried dill
  • Fresh parsley
  • Fresh ground pepper
  • A few slices of lemon

For the Toast

  • 2-4 Slices country brear
  • 1 Ripe avocado, sliced
  • 2 Lemon, quartered
  • Salt and pepper
  • Poached salmon, sliced or chunked into pieces
  • Red onion slices
  • Dill fronds for serving

For the Sauce

  • 2 Tbsps Dijon Mustard
  • 1 Tbsp Honey Mustard
  • 1 Tsp Whole-grain Mustard
  • 1 1/2 Tbsp Sugar
  • 2 1/2 Tbsp White wine
  • 2 1/2 Tbsp Olive oil
  • 1 1/2 Tbsp Grapeseed oil
  • 2 Tbsp Minced fresh dill
  • 1/2 Tsp Kosher salt

Instructions
 

Poaching the salmon

  • Cover and cook 5 to 10 minutes depending on the thickness of the fillet, or to the desired fineness. Do not overlook! I only cook for 5 because I like my salmon medium rare.

Building the Toast

  • Toast the bread and add sliced avocado. Sprinkle with lemon juice, then sprinkle with salt and pepper.

  • Place a slice of salmon, ribboning it out to cover the bread or some chunks. Drizzle with the sauce. Garnish with some red onion, sprinkle with dill fronds, salt and pepper, and serve with extra sauce.

For the sauce

  • Whisk together the Dijon Mustard, honey mustard, whole grain mustard, sugar, and vinegar in a medium bowl. Combine the oils in a cup. Slowly add the mixture to the mustard mixture, whisking constantly until emulsified. Stir in the dill and salt.
